Os legumes cozinhados nesta receita são batatas, beringelas e pimentos verdes. São primeiro cozinhados separadamente e depois braseados num wok.
Receita de “Vegetais cozinhados de Pequim” para 4 pessoas:
-2 batatas (cerca de 300g no total) em pedaços
-300g de peças de beringela
-400g de pedaços de pimenta verde (sem sementes)
-2 colheres de sopa de cebola chinesa finamente picada
-2 colheres de sopa de alho picado
-2 colheres de sopa de molho de soja transparente
-2 colheres de chá de açúcar
-2 colheres de sopa de molho de ostras
-2 colheres de sopa de vinho culinário chinês
-600ml de água
-2 boas pitadas de sal
-oil
Lavar bem os legumes. Cortar as batatas (com ou sem a pele). Num calor moderado, aquece o wok com 2 colheres de sopa de óleo. Adicionar as batatas e cozinhá-las de um lado até ficarem coloridas.
Vire-os e cozinhe o outro lado. Quando o segundo lado for colorido, retirar do wok e colocar de lado.
Adicionar mais 2 colheres de sopa de óleo e proceder da mesma forma com as beringelas.
Depois com as pimentas (sempre com um pouco de óleo!).
No wok vazio, em calor moderado, adicionar 2 colheres de sopa de óleo, o alho e a cebolinha. Cozinhar a castanho claro.
Adicionar água, molho de soja transparente, molho de ostras, açúcar, vinho chinês e sal.
Acrescentar as batatas e cobrir o wok. Após 10 minutos, adicionar as beringelas. Voltar a cobrir e cozinhar durante mais 10 minutos. Finalmente adicionar os pimentos verdes. Cobrir e cozinhar até que a água se tenha evaporado e reste apenas um molho ligeiramente espesso. Servir imediatamente.
