الخضار المطهو ببطء في هذه الوصفة هي البطاطس والباذنجان والفلفل الأخضر. يتم طهيها بشكل منفصل لأول مرة ، ثم يتم طهيها في مقلاة.
وصفة “خضروات بكين المطهو ببطء” لأربعة أشخاص:
-2 بطاطس (حوالي 300 جرام إجمالاً) على شكل قطع
– 300 جرام من الباذنجان على شكل قطع
-400 جرام فلفل أخضر مقطعة (بدون بذور)
-2 ملاعق طعام من الثوم المعمر الصيني المفروم ناعماً
-2 ملاعق كبيرة ثوم مفروم
-2 ملاعق كبيرة من صلصة الصويا الخفيفة
-2 ملاعق صغيرة من السكر
-2 ملاعق كبيرة من صلصة المحار
-2 ملاعق كبيرة من نبيذ الطبخ الصيني
– 600 مل ماء
-2 رشة ملح جيدة
-نفط
اغسل الخضار جيدًا. قطعي البطاطس (بقشرها أو بدونها). على حرارة معتدلة سخني المقلاة بملعقتين كبيرتين من الزيت. نضيف البطاطس ونطهو على جانب واحد حتى يصبح لونها بنياً.
اقلبها واطهي الجانب الآخر. عندما يتحول لون الوجه الثاني إلى اللون البني ، أخرجه من المقلاة واتركه جانباً.
أضف ملعقتين كبيرتين من الزيت واستمر بنفس الطريقة مع الباذنجان.
ثم مع الفلفل (دائما مع قليل من الزيت!).
في المقلاة الفارغة ، أضيفي ملعقتين كبيرتين من الزيت والثوم والبصل الأخضر على نار معتدلة. اطبخي حتى يصبح لونه بني فاتح.
نضيف البطاطس ونغطي الووك. بعد 10 دقائق ، أضيفي الباذنجان. غطي المزيج مرة أخرى واطهيه لمدة 10 دقائق أخرى. أخيرًا نضيف الفلفل الأخضر. يغطى ويطهى حتى يتبخر الماء ويتبقى فقط صلصة سميكة. قدميها على الفور.
