¡Este es mi último trabajo para Traou mad! Hace algún tiempo, a Traou Mad le gustó mi pequeño reportaje sobre su fábrica de Pont Aven (ver el reportaje AQUÍ). Desde entonces me han pedido que haga algunas recetas para su blog: http://blog.traoumad.fr/. ¡Así que tuve el placer de recibir un paquete lleno de maravillas en casa!
Esta vez he elaborado una receta con los tres pasteles dulces emblemáticos de Traou Mad, a los que he añadido una base de chocolate, praliné crujiente y… ¡mermelada de frambuesa! Una maravilla de mantequilla pura que está en perfecta ósmosis con los pasteles de Pont Aven, el Traou Mad y las crêpes dentelles. Una de mis probadoras habituales dijo que era uno de los mejores postres que había probado.
Receta para 4 tartas «completamente traou mad»:
-150g de traou mad de Pont Aven
-40g de mantequilla derretida
-8 pasteles de Pont Aven
-Mermelada de frambuesa
Praliné crujiente:
-120 g de pasta de praliné
-15g de chocolate
-15g de mantequilla blanda
-20g de crêpes dentelles (2 o 3) de Pont Aven
Ganache de chocolate:
-140 g de nata líquida
-190g de chocolate con leche
Mezclar el traou mad con la mantequilla derretida. Dividir la masa en polvo entre 4 aros de postre de 8 cm.
Hornear a 170°C durante 10 minutos. Retirar y añadir una cucharadita de mermelada de frambuesa a cada círculo. Vuelva a meter en el horno durante 10 minutos, la mermelada se cocinará ligeramente. Retirar y dejar enfriar.
Preparar el praliné. Derretir el chocolate y la mantequilla. Añadir el praliné y las crêpes dentelles trituradas.
Mezclar bien, ¡el praliné está listo!
Repartir el praliné entre los 4 círculos (¡sólo hay tres en la foto!).
Añadir una oblea de Pont Aven sobre el praliné.
Añadir una cucharadita de mermelada de frambuesa a cada pastel.
Preparar el ganache de chocolate con leche:
Llevar la nata a ebullición a fuego lento y verterla sobre los trozos de chocolate con leche (¡en este caso pastillas Barry!).
Mezclar bien y ¡ya está!
Verter el ganache líquido en los cuatro círculos.
El pastel está casi terminado.
Colocar suavemente un pastel sobre el ganache.
Si quieres preparar estas pequeñas delicias el día antes de servirlas, es mejor que pongas el último pastel antes de servirlas para evitar que estén blandas.
Dejar enfriar al menos 3 horas antes de desmoldar con un secador de pelo (pasándolo para calentar el círculo) y ¡disfrutar frenéticamente!
