Este é o meu último trabalho para o Traou Mad! Há algum tempo atrás, Traou Mad gostou do meu pequeno relatório sobre a sua fábrica em Pont Avenue (ver o relatório AQUI). Desde então, pediram-me para fazer algumas receitas para o seu blogue: http://blog.traoumad.fr/. Por isso tive o prazer de receber um pacote cheio de maravilhas em casa!
Desta vez inventei uma receita com os três bolos doces emblemáticos do Traou Mad, depois acrescentei uma base de chocolate, pralina crocante e…compota de framboesa! Uma maravilha de manteiga pura que está em perfeita osmose com os bolos Pont Aven, o Traou Mad e os crepes dentelles. Uma das minhas provadoras habituais disse que foi uma das melhores sobremesas que ela já comeu!
Receita para 4 bolos “completamente traou mad”:
-150g de traou louco de Pont Aven
-40g de manteiga derretida
-8 bolos de Pont Aven
-Geleia de framboesa
Pralina crocante:
-120g de pasta de pralina
-15g de chocolate
-15g de manteiga mole
-20g de crepes dentelles (2 ou 3) de Pont Aven
Ganache de chocolate:
-140g de creme completo
-190g de chocolate de leite
Misturar o traou maduro com a manteiga derretida. Dividir a massa em pó entre 4 anéis de sobremesa de 8cm.
Cozer a 170°C durante 10 minutos. Remover e adicionar uma colher de chá de compota de framboesa a cada círculo. Voltar ao forno durante 10 minutos, a compota cozinhará ligeiramente. Retirar e deixar arrefecer.
Preparar a pralina. Derreter o chocolate e a manteiga. Acrescentar a pralina e os crepes dentelles esmagados.
Misture bem, a pralina está pronta!
Divida a pralina entre os 4 círculos (há apenas três na foto!).
Adicionar uma bolacha Pont Aven em cima da pralina.
Adicionar uma colher de chá de compota de framboesa a cada bolo.
Preparar os ganaches de chocolate de leite:
Levar o creme a ferver em lume brando e verter sobre os pedaços de chocolate de leite (neste caso pastilhas de Barry!).
Misture bem e já está!
Verter o ganache líquido para os quatro círculos.
O bolo está quase terminado.
Colocar gentilmente um bolo no ganache.
Se desejar preparar estas pequenas guloseimas no dia anterior ao de servir, é melhor pousar o último bolo antes de o servir para evitar que fiquem macios!
Deixar arrefecer durante pelo menos 3 horas antes de desenformar com um secador de cabelo (passando-o para aquecer o círculo) e desfrutar freneticamente!
