¡Atención nueva receta muy rica! Conozca a las «tortugas pecaneras», una golosina de North America . ¿Pero de qué se trata? Pues un caramelo de nuez muy suave, recubierto de nueces (¡de nuevo!) y chocolate con leche. En otras palabras: es una bomba calórica. ¡Pero es tan bueno! El caramelo es simplemente perfecto y finalmente vi cómo hacer estos pequeños horrores cuando hice el caramelo de Millionaire Shortbreads. He adaptado el caramelo añadiendo sal, vainilla y nueces picadas. Cuando cociné este caramelo y lo probé, pensé que estaba abriendo la caja de Pandora… En cualquier caso, para complacerte a ti mismo o para ofrecer, ¡estas «tortugas de nuez» harán feliz a la gente!
Receta de tortugas de nuez y chocolate:
-175g de mantequilla
-150g de vergeoise marrón
-25g de miel
-1/2 cucharadita de sal
-1 cucharadita de vainilla líquida
-1 lata de leche condensada azucarada
-150g de nueces picadas
-300g de nueces
-400g de chocolate con leche atemperado (método de atemperado AQUÍ)
Poner la vergeoise marrón, la miel, la sal, la vainilla líquida y la mantequilla en un cazo a fuego moderado.
Mezclar bien para derretir la mantequilla.
Cuando la mezcla rompa a hervir, añadir la lata de leche condensada.
Llevar a ebullición de nuevo y cocinar durante 2 minutos sin dejar de remover.
Añadir las nueces picadas.
Mezcla bien, ¡está listo!
Verter en un marco de 18X18 colocado sobre papel de horno o un tapete de silicona para hornear.
Deje que el caramelo se enfríe completamente antes de enfriarlo durante dos horas.
Intenta cortar cuadrados grandes de 3cm por 3cm. El caramelo es muy suave en esta etapa. Por lo tanto, debe estar lo suficientemente frío para facilitar esta operación. Por supuesto que se puede comer tal cual.
Tome un trozo cuadrado de caramelo y coloque 6 mitades de nueces como se muestra en las fotos.
Haz lo mismo con todo el caramelo. A continuación, poner el caramelo en el congelador durante 2 horas para que se pueda poner en el chocolate muy fácilmente. Esto evitará que el caramelo se hunda cuando se sumerja en el chocolate…
Atemperar el chocolate con leche (método de la manteca de cacao mycryo AQUÍ).
Sumergir cada «tortuga» de en el chocolate templado.
Raspar bien la parte inferior del tenedor antes de colocarlo en el papel de horno. Como el caramelo está congelado, el chocolate se endurecerá muy rápidamente.
Deje que el chocolate se atempere y el caramelo se descongele antes de engullirlo y rellenarlo…
