Atenção nova receita muito rica! Conheça as “tartarugas pecan”, um doce de América do Norte . Mas de que é que se trata? Bem, um caramelo de nozes pecan muito suave, revestido com nozes pecan (novamente!) e chocolate de leite. Por outras palavras: é uma bomba calórica. Mas é tão bom! O caramelo é simplesmente perfeito e finalmente vi como fazer estes pequenos horrores quando fiz o caramelo de Millionaire Shortbreads. Adaptei o caramelo adicionando sal, baunilha e nozes pecan picadas. Quando cozinhei este caramelo e o provei, pensei que estava a abrir uma caixa de Pandora… Em qualquer caso, para agradar a si próprio ou para oferecer, estas “tartarugas de nozes pecã” farão as pessoas felizes!
Receita para tartarugas Pecan & Chocolate:
-175g de manteiga
-150g de vergeoise castanha
-25g de mel
-1/2 colher de chá de sal
-1 colher de chá de baunilha líquida
-1 lata de leite condensado açucarado
-150g de nozes pecan picadas
-300g de nozes pecan
-400g de chocolate de leite temperado (método de têmpera AQUI)
Colocar a vergeoise castanha, mel, sal, baunilha líquida e manteiga numa caçarola em lume moderado.
Misturar bem para derreter a manteiga.
Quando a mistura chegar à ebulição, adicionar a lata de leite condensado adoçado.
Levar à ebulição novamente e depois cozinhar durante 2 minutos enquanto se mexe.
Acrescentar as nozes pecan picadas.
Misture bem, está pronto!
Verter para uma moldura 18X18 colocada sobre papel vegetal ou um tapete de silicone.
Deixar o caramelo arrefecer completamente antes de arrefecer durante duas horas.
Tente cortar quadrados grandes de 3cm por 3cm. O caramelo é muito macio nesta fase. Deve, portanto, estar frio o suficiente para facilitar esta operação. Claro que se pode comer como está!
Pegar num pedaço quadrado de caramelo e colocar 6 metades pecan, como se mostra nas fotos.
Faça o mesmo com todo o caramelo. Depois colocar o caramelo no congelador durante 2 horas para que possa ser colocado no chocolate muito facilmente. Isto evitará que o caramelo se afunde quando está submerso em chocolate.
Temperar o chocolate de leite (método da manteiga de cacau mycryo AQUI).
Mergulhar cada “tartaruga” no chocolate temperado.
Raspar bem a parte inferior do garfo antes de o colocar sobre papel vegetal. Como o caramelo é congelado, o chocolate endurece muito rapidamente.
Deixe o chocolate temperar e o caramelo descongelar antes de engolir e rechear o seu rosto…
