Después de mi viaje culinario a Seúl (ver AQUÍ), muchos de vosotros me pedisteis la receta de las tortitas que se ven en los mercados. Observé cómo lo hacían en el momento y podéis ver en las fotos dónde está la masa lista para hornear. Este es un panqueque de frijol mungo. Una receta muy sencilla. ¡Este pequeño frijol es simplemente mágico! Sólo tienes que dejarlo en remojo, licuarlo y luego añadirle agua y lo que quieras. Te doy aquí una receta básica y puedes imaginar lo que quieras; kimchi, verduras (zanahorias, calabacín…) carnes… Hoy una simple tortilla de cebolleta con un poco de ajo en polvo y aceite de sésamo tostado. Sin huevos ni harina, la tortita se cocina sola gracias a este pequeño grano amarillo. Se puede encontrar en las tiendas de comestibles ya descascarillada y seca. El panqueque es sabroso, suave en el centro y crujiente en el borde…
Receta de tortitas de judías mungo y cebolleta:
-500g de judías mungo secas peladas -200 g de cebollino chino
-agua de remojo
-250g de agua para la masa -Sal en cantidad suficiente -1 cucharadita de ajo en polvo -1 cucharada de aceite de sésamo tostado -Aceite para freír
¡Aquí están las pequeñas judías mungo! Se venden ya peladas (en Tang Frères, por ejemplo). ¡Estos son los que necesitamos!
Póngalos en un recipiente grande y cubra completamente con agua fría y deje que se hinchen durante la noche.
Al día siguiente, las judías están listas para ser utilizadas.
Escúrralos bien y póngalos en una licuadora o batidora.
Escurrimos pero añadiremos agua para obtener buenas medidas. Añadir los 250 ml de agua y poner en marcha el robot de cocina.
El resultado es una especie de puré que se puede diluir con un poco de agua.
Esto es el cebollino.
Corta la parte blanca más importante.
A continuación, picar (no necesariamente demasiado fino) las cebolletas.
Verter la masa y mezclar bien .
Añadir la sal (todavía hay que añadir mucha sal), el aceite de sésamo tostado y el ajo.
El consejo de Bernard: para el ajo en polvo, no es ajo en polvo sino ajo en polvo que se puede encontrar fácilmente en las tiendas de comestibles asiáticas.
Se puede añadir agua para que la masa sea más líquida y se pueda extender con cierta facilidad. ¡No hay riesgo de que la masa no cuaje con la judía mágica!
Vierta el equivalente a dos cucharadas de aceite en una sartén caliente. Vierta el equivalente a dos o tres cucharadas de pasta en el aceite caliente. ¡La magia se producirá muy rápidamente! ¡El panqueque es muy rápido de agarrar!
Dar la vuelta a la tortita cuando la parte superior se vea chamuscada, y luego darle la vuelta con regularidad para que se coloree más y más (en la foto aún no está suficientemente cocida).
Hacer lo mismo con toda la masa, añadiendo un poco de aceite cada vez (¡no tiene por qué ser muy ligera!).
Servir caliente (porque no está tan bueno caliente) con salsa de soja o un poco de vinagre negro asiático.
