Depois da minha viagem culinária a Seul (ver AQUI), muitos de vós pediram-me a receita para as panquecas que vêem nos mercados. Observei como o fizeram no local e podem ver-se nas fotos onde a massa está pronta a cozer. Isto é uma panqueca de feijão mungo. Uma receita muito simples! Este feijãozinho é simplesmente mágico! Basta deixá-lo de molho, misturá-lo e depois adicionar água e tudo o mais que quiser! Dou-vos aqui uma receita básica e podem imaginar o que quiserem; kimchi, legumes (cenouras, courgette…) carnes… Hoje uma simples panqueca de cebolinha com um pouco de pó de alho e óleo de gergelim tostado. Sem ovos ou farinha, a panqueca cozinha-se sozinha graças a este pequeno feijão amarelo. Pode ser encontrado em mercearias já descascadas e secas. A panqueca é saborosa, macia no meio e estaladiça na borda.
Receita para panquecas de feijão mungo e cebolinha:
-500g de feijões mung secos descascados -200g de cebolinho chinês
– água para molhar
-250g de água para a massa -sal em quantidade suficiente -1 colher de chá de alho em pó -1 colher de sopa de óleo de gergelim tostado -óleo para fritar
Aqui estão os pequenos feijões mung! São vendidos já descascados (em Tang Frères, por exemplo). Estas são as que precisamos!
Colocá-los numa tigela grande e cobrir completamente com água fria e sair para inchar durante a noite.
No dia seguinte os feijões estão prontos a usar!
Escorra-os bem e coloque-os numa misturadora ou misturadora.
Drenamos mas vamos adicionar água para obter boas medições. Adicionar os 250ml de água e ligar o processador de alimentos.
O resultado é uma espécie de puré que pode ser diluído com um pouco de água.
Este é o cebolinho.
Cortar a parte branca mais importante.
Depois cortar (não necessariamente muito finamente) as cebolinhas.
Verter a massa e misturar bem .
Adicionar o sal (ainda é necessário adicionar muito sal), o óleo de gergelim tostado e o alho.
O conselho de Bernard: para o alho em pó, não é o alho em pó mas sim o alho em pó que pode ser facilmente encontrado nas mercearias asiáticas.
Pode-se adicionar água para tornar a massa mais líquida, para que possa ser espalhada com bastante facilidade. Nenhum risco de a massa não se fixar com o feijão mágico!
Verter o equivalente a duas colheres de sopa de óleo para uma panela quente. Verter o equivalente a duas a três colheres de sopa de pasta para o óleo quente. A magia irá acontecer muito rapidamente! A panqueca é muito rápida de agarrar!
Virar a panqueca quando a parte superior parecer queimada, depois virá-la regularmente para a colorir cada vez mais (na foto ainda não está suficientemente cozinhada).
Faça o mesmo para toda a massa, adicionando um pouco de óleo de cada vez (não é necessariamente muito leve!).
Servir quente (porque não está tão quente) com molho de soja ou um pouco de vinagre negro asiático.
