¡Aquí hay una terrina que espero que haga feliz a la gente! Un plato fresco para disfrutar en los días cálidos de verano. Muy fácil de hacer y con un aspecto bastante agradable, será perfecto en sus buffets navideños. También puede personalizarlo con hierbas en la capa de huevo o en el relleno de salmón. Receta para una terrina para 6 u 8 personas:
La gelatina especial:
-1 bolsa de jalea de Madeira preparada con 200 ml de agua (en lugar de 500 ml como se indica en el envase)
Relleno de salmón:
-600g de salmón fresco (para tener 500 cocidos sin espinas ni piel)
-150g de gelatina
-80g de mayonesa
Relleno de huevos:
-3 huevos duros
-60g de mayonesa
-35g de gelatina
-Hierbas si quieres: perejil, cebollino, eneldo…
-8 a 10 lonchas de salmón ahumado
Prepare la jalea vertiendo un sobre en sólo 200 ml de agua. (No siga el consejo del paquete de utilizar 500 ml, ya que desea una mayor concentración para esta receta).
Mezclar bien, llevar a ebullición y apagar el fuego. Reservar a temperatura ambiente.
Prepare una mayonesa tradicional «casera». ¡Para los que no saben cómo hacerla, la receta está AQUÍ pero sin poner el blanco en absoluto! O una muy buena mayonesa comercial.
Poner el salmón crudo en una cacerola grande con agua fría y unas hojas de laurel.
Lleva todo a ebullición y luego apaga el fuego. Dejar el salmón en esta agua muy caliente durante 15 minutos.
Escúrralo y déjelo enfriar a temperatura ambiente. El salmón se puede cocinar el día anterior… Debe haber 500 g de salmón cocido sin espinas ni piel.
Pele el salmón lo más posible para quitarle TODAS las espinas. Esta es la parte que más tiempo lleva, ya que no hay nada peor para mí que escupir huesos en un plato ya preparado. En un pescado fresco sí, pero en una terrina, ¡no!
Poner la carne de salmón en una batidora con la mayonesa (80 g) y los 150 g de gelatina concentrada.
Mezclar para hacer un relleno.
Pelar los huevos duros y cortarlos en trozos grandes.
Colóquelos en un bol con la mayonesa (60 g) y la gelatina (35 g). Mezclar con una cuchara. También puedes añadir hierbas (perejil, cebollino, eneldo).
Untar ligeramente con mantequilla el interior de un molde de 20 cm de largo. Se puede pincelar con mantequilla derretida. Esto ayudará (¡en gran medida!) a desmoldar la terrina, ya que el salmón se «deslizará» sobre la mantequilla. Más adelante se hablará de esto…
Poner la sartén ligeramente enmantecada en el congelador durante 10 minutos para que la mantequilla se «cuaje». Sacar la terrina y colocar las lonchas de salmón ahumado como se ve en la foto para forrar el molde.
Vierta la mitad del relleno de salmón por encima, asegurándose de que la superficie sea uniforme.
A continuación, vierta todo el relleno de huevo.
Terminar con el resto del relleno de salmón.
Doblar las lonchas de salmón ahumado sobre el relleno y enfriar la terrina durante al menos 4 horas.
Para desmoldar: dar la vuelta a la terrina en un plato y pasar un secador de pelo por la superficie del molde. El calor derretirá la mantequilla y el salmón se deslizará. ¡Salud! ¡Está desmoldado!
Lo único que hay que hacer es disfrutar de esta fresca y deliciosa terrina a la sombra.
