Aqui está uma terrina que espero que faça as pessoas felizes! Um prato fresco para ser apreciado nos dias quentes de Verão. Muito fácil de fazer e com um visual bastante agradável, será perfeito nos seus buffets de férias. Pode também personalizá-lo com ervas na camada de ovo ou no recheio de salmão. Receita para uma terrina para 6 ou 8 pessoas:
A geleia especial:
-1 saco de geleia da Madeira preparado com 200ml de água (em vez de 500ml como indicado no pacote)
Recheio de salmão:
-600g de salmão fresco (para ter 500 cozinhados sem espinhas e pele)
-150g de geleia
-80g maionese
Enchimento com ovos:
-3 ovos cozidos duros
-60g de maionese
-35g de geleia
-herbs se quiser: salsa, cebolinho, endro…
-8 a 10 fatias de salmão fumado
Preparar a geleia vertendo uma saqueta em apenas 200ml de água. (Não siga o conselho no pacote que diz para usar 500ml, pois quer uma concentração mais elevada para esta receita!)
Misturar bem, deixar ferver e desligar o calor. Colocar de lado à temperatura ambiente.
Preparar uma maionese tradicional “feita em casa”. Para aqueles que não sabem como fazê-lo, a receita é AQUI, mas sem colocar o branco de todo! Ou uma maionese comercial muito boa.
Colocar o salmão cru numa grande panela de água fria com algumas folhas de louro.
Levar tudo à ebulição e depois desligar o calor. Deixar o salmão nesta água muito quente durante 15 minutos.
Drenar e deixar arrefecer até à temperatura ambiente. O salmão pode ser cozinhado no dia anterior. Deve haver 500g de salmão cozido sem espinhas nem pele.
Esfolar o salmão tanto quanto possível para remover TODOS os ossos! Esta é a parte mais demorada do processo, pois não há nada pior para mim do que cuspir ossos num prato pronto a fazer. Num peixe fresco sim, mas numa terrina, não!
Coloque a carne de salmão num misturador com a maionese (80g) e os 150g de geleia concentrada.
Misturar para fazer um recheio.
Descascar os ovos cozidos e cortá-los em pedaços grandes.
Colocá-los numa tigela com a maionese (60g) e a geleia (35g). Misturar com uma colher. Também se pode adicionar ervas (salsa, cebolinho, endro).
Manteiga ligeiramente o interior de uma lata de bolo de 20cm de comprimento. Pode escovar com manteiga derretida. Isto ajudará (muito!!) com o desmoldamento da terrina, uma vez que o salmão “desliza” sobre a manteiga. Mais sobre isto mais tarde…
Colocar a frigideira ligeiramente untada com manteiga no congelador durante 10 minutos para “pôr” a manteiga. Retirar a terrina e colocar as fatias de salmão fumado como se mostra na foto para forrar o molde.
Verter metade do recheio de salmão por cima, certificando-se de que a superfície é uniforme.
Depois deitar todo o recheio de ovos.
Terminar com o restante recheio de salmão.
Dobrar as fatias de salmão fumado sobre o recheio e refrigerar a terrina durante pelo menos 4 horas.
Desmoldar: virar a terrina sobre uma placa e depois passar um secador de cabelo sobre a superfície do molde. O calor derreterá a manteiga e o salmão escorregará! Esperemos que não esteja moldado!
Tudo o que tem de fazer é desfrutar desta terrina fresca e deliciosa à sombra!
