La carne de vacuno con pera Nashi es una deliciosa carne de vacuno extra tierna que permanece durante varias horas en un adobo de pera Nashi. Esta pera también se llama «Pera Shingo» o «Pera Coreana» y está a medio camino entre una pera y una manzana, pero más grande. Esta carne se cocina en un wok y se carameliza ligeramente.
Receta de «beef pear nashi» para 6 personas:
-1kg de carne de vacuno (yo uso lomo)
-1 Pera Nashi
-1 cebolla
-12 dientes de ajo (¡parece mucho pero no lo es!)
-55g de azúcar
-2 cucharadas de miel
-2 cucharadas de aceite de sésamo tostado
-1 cucharadita de bicarbonato de sodio (ver abajo las razones)
-60ml de vino chino
-60ml de agua
-120ml de salsa de soja clara
-sésamo tostado
Para aquellos que se lo pregunten, este es el aspecto de una Pera Nashi:
La receta es sencilla. Pelar la cebolla, el ajo y la pera, quitando el corazón, y luego poner todos los ingredientes, excepto la carne y las semillas de sésamo, en una batidora y batir para obtener un adobo líquido. El bicarbonato de sodio ablandará la carne considerablemente. Por eso la carne de vacuno está siempre tan tierna en las charcuterías chinas, le añaden bicarbonato. Sólo debe utilizar una cucharadita de bicarbonato, de lo contrario la carne perderá su sabor.
Cortar la carne en tiras finas y ponerlas en un bol.
Vierta la marinada sobre la carne.
Cubrir con semillas de sésamo tostadas y mezclar bien. Cerrar con film transparente y guardar en un lugar fresco durante 3 horas. La carne absorberá la mayor parte del jugo.
Después de tres horas, coge un wok, o una sartén, y pon aceite en el fondo (¡el equivalente a 4 cucharadas!). Poner a fuego alto.
Freír la carne, removiendo constantemente con una cuchara de madera.
El consejo de Bernard: Yo prefiero cocinar la carne en varias tandas. Si se cocina toda la carne a la vez, no se cocinará bien. Así que uso menos aceite cada vez y cocino todo en tres tandas. De este modo, la carne tiene mucho espacio para caramelizarse.
Freír hasta que la marinada se haya evaporado. En este momento la carne empieza a caramelizarse.
Servir inmediatamente con arroz basmati o arroz pegajoso . Espolvorear con semillas de sésamo tostadas.
