A carne de vaca com pêra Nashi é uma deliciosa carne de vaca extra-terna que permanece durante várias horas numa marinada de pêra Nashi. Esta pêra é também chamada “Pêra Shingo” ou “Pêra Coreana” e está algures entre uma pêra e uma maçã, mas maior! Esta carne é cozinhada num wok e torna-se ligeiramente caramelizada.
Receita de “beef pear nashi” para 6 pessoas:
-1kg de carne de vaca (uso lombinho)
-1 Pêra Nashi
-1 cebola
-12 dentes de alho (parece muito, mas não é!)
-55g de açúcar
-2 colheres de sopa de mel
-2 colheres de sopa de óleo de gergelim tostado
-1 colher de chá de bicarbonato de sódio (ver abaixo por razões)
-60ml de vinho chinês
-60ml de água
-120ml de molho de soja transparente
-gergelim tostado
Para aqueles que se interrogam, isto é o aspecto de uma Pêra Nashi:
A receita é simples. Descascar a cebola, o alho e a pêra, retirando o caroço, depois colocar todos os ingredientes excepto a carne e as sementes de sésamo num liquidificador e misturar para obter uma marinada líquida. O bicarbonato de sódio vai amaciar consideravelmente a carne. É por isso que a carne é sempre tão tenra nas charcutarias chinesas, que acrescentam bicarbonato de sódio. Só precisa realmente de uma colher de chá de bicarbonato, caso contrário a carne perderá o seu sabor!
Cortar a carne em tiras finas e colocá-las numa tigela.
Verter a marinada sobre a carne.
Cobrir com sementes de gergelim torradas e misturar bem. Fechar com película aderente e manter num local fresco durante 3 horas. A carne absorverá a maior parte do sumo.
Após três horas, pegar num wok, ou numa frigideira, e colocar óleo no fundo (o equivalente a 4 colheres de sopa!). Colocar em alta temperatura.
Fritar a carne, mexendo constantemente com uma colher de pau.
O conselho de Bernard: Prefiro cozinhar a carne em vários lotes. Se cozinhar toda a carne de uma só vez, não vai cozinhar bem. Por isso, uso menos óleo de cada vez e cozinho a coisa toda em três lotes. Assim, a carne tem muito espaço para caramelizar!
Fritar até que a marinada se tenha evaporado. Nesta altura, a carne começa a caramelizar.
Servir imediatamente com arroz basmati ou arroz pegajoso . Polvilhar com sementes de gergelim tostadas.
