ناشي الكمثرى اللحم البقري اللذيذ الطري للغاية راحة لعدة ساعات في ماء مالح ناشي يعتمد على الكمثرى. هذا الكمثرى يسمى أيضا “الكمثرى شينغو” أو “الكمثرى الكورية” بين الكمثرى والتفاح ولكن أكبر! يُطهى هذا اللحم في مقلاة ويصبح كراميل قليلاً.
وصفة “لحم بقري كمثرى ناشي” لـ 6 أشخاص:
– كيلو لحم بقر (أنا أستخدم لحم الخاصرة)
-1 ناشي كمثرى
-1 بصلة
– 12 فص ثوم (يبدو كثيرًا ولكن لا!)
-55 جرام سكر
-2 ملاعق كبيرة من العسل
-2 ملاعق كبيرة من زيت السمسم المحمص
-1 ملعقة صغيرة من صودا الخبز (انظر لماذا أدناه)
– 60 مل من النبيذ الصيني
– 60 مل ماء
-120 مل صلصة صويا خفيفة
– سمسم محمص
هنا ، بالنسبة لأولئك الذين يتساءلون ، كيف يبدو ناشي الكمثرى:
الوصفة بسيطة. قشر البصل والثوم والكمثرى عن طريق إزالة اللب ، ثم ضع جميع المكونات ما عدا اللحم وبذور السمسم في الخلاط واخلط كل شيء للحصول على تتبيلة سائلة. تعمل صودا الخبز على تطرية اللحم بدرجة كبيرة. هذا هو السبب في أن اللحم البقري دائمًا ما يكون طريًا جدًا في المطاعم الصينية ، حيث يضيفون صودا الخبز. تحتاج حقًا فقط إلى إضافة ملعقة صغيرة غير مكدسة من صودا الخبز وإلا فإن اللحم سيفقد مذاقه!
نقطع اللحم إلى شرائح رفيعة ونضعها في وعاء.
نسكب التتبيلة فوق اللحم.
ونغطي كل شيء ببذور السمسم المحمصة ، ثم نخلط جيداً. يغلق بغشاء بلاستيكي ويوضع في الثلاجة لمدة 3 ساعات. سيمتص اللحم معظم العصير.
بعد ثلاث ساعات ، خذ مقلاة أو مقلاة وضع القليل من الزيت في القاع (ما يعادل 4 ملاعق كبيرة!). يوضع على نار عالية.
يقلى اللحم مع التحريك باستمرار بملعقة خشبية.
نصيحة من برنارد: أفضل طهي اللحم على دفعات. إذا قمت بطهي كل اللحوم دفعة واحدة ، فسيتم طهيها بشكل سيء. لذلك أضع زيتًا أقل في كل مرة وأنا أطبخها ثلاث مرات. مثل هذا اللحم الكثير من المساحة للكراميل جيدًا!
يقلى حتى يتبخر كل التتبيلة. يبدأ اللحم بالكراميل في هذه المرحلة.
قدميها على الفور مع أرز بسمتي أوأرز دبق. نرش بذور السمسم المحمص.
