Acabo de regresar de una breve estancia en Bangkok y, mientras curioseaba en unos grandes almacenes, me encontré con estas tartas de queso crema calientes y líquidas. Son unas pequeñas bombas deliciosas y muy ricas. Se pueden comer aún calientes, y a pesar de su gran parecido con los pastéis de nata (mi receta AQUÍ), el sabor no se parece en nada. Al parecer, vienen de Japón y últimamente se han hecho muy populares en el sudeste asiático. Hay dos tipos, uno más firme que se come frío y éste que se come caliente y más cremoso. ¡Para ser probado!
Receta para 11 tartas :
70 g de azúcar glas
30g de huevo
100 g de mantequilla semisalada
215g de harina T55
Para la crema:
185 g de queso crema Philadelphia
25g de mantequilla blanda
50 g de azúcar glas
8g de harina de maíz
115 g de yogur natural, removido
30g de huevo
En primer lugar, prepare la masa.
Ponga la mantequilla blanda, el azúcar glas y 30 g de huevo en el bol de su robot de cocina o en un bol.
Mezclar hasta obtener una consistencia cremosa. A continuación, añadir la harina.
Mezclar de nuevo con la plancha hasta que la masa esté lisa. No amasar más de lo necesario.
Poner la bola, que se aplanará, en film transparente. Conservar en un lugar fresco.
Derretir la mantequilla y el queso crema juntos en el microondas.
Verter la mezcla en un bol y añadir el azúcar glas y la harina de maíz.
Batir todo junto, verter el yogur removido y el huevo.
Mezclar bien y verter en un baño de agua.
Batir continuamente hasta que la crema espese.
Cuando la crema esté suave, viértala en un recipiente limpio y cúbrala con film transparente (resistente al calor). Dejar enfriar y meter en la nevera.
Cuando la crema esté fría, saque la masa y extiéndala con un rodillo hasta alcanzar un grosor de 2-3 mm. Cortar con un cortapastas más grande que los moldes de pastéis de nata utilizados.
Colocar un trozo de hojaldre en el molde y rellenarlo perfectamente.
Haz lo mismo con los otros 10 moldes (aquí hice la mitad para las pruebas).
Hornear de 18 a 20 minutos a 170°C. La masa debe tener un color claro, no demasiado dorado, ya que luego se vuelve a hornear. Dejar enfriar.
Cubrir las tartas con la crema. Yo uso una manga pastelera para esto.
Pincelar con yema de huevo. Hazlo con cuidado.
Vuelva a meter en el horno, esta vez a 235°C durante 8 minutos. Si la yema no se dora lo suficiente, encienda el grill durante 2 minutos, no más, con cuidado de no quemar las tartas.
Déjelos reposar durante 15 minutos antes de comerlos. Están especialmente buenos cuando todavía están calientes y mojados por dentro.
