لقد عدت للتو من إقامة قصيرة في بانكوك وأثناء جولة في متجر متعدد الأقسام ، صادفت هذه الفطائر الدافئة مع الجبن السائل. هذه قنابل صغيرة لذيذة وغنية جدًا. يتم تناولها لا تزال فاترة وعلى الرغم من تشابهها تقريبًا مع pastéis de nata (وصفتي هنا ) ، فإن المذاق ليس له علاقة. يبدو أنهم يأتون إلينا من اليابان وأصبحوا يتمتعون بشعبية كبيرة في جنوب شرق آسيا مؤخرًا. هناك نوعان ، أحدهما أكثر حزما يؤكل باردا وهذا النوع يؤكل ساخنًا ودسمًا. لاختبار !!
وصفة لـ 11 قطعة تارتليت:
70 جرام سكر بودرة
30 جرام بيضة
100 جرام زبدة نصف مملحة
215 جرام طحين T55
للقشدة:
185 جرام جبنة كريمية على طريقة فيلادلفيا
25 جرام زبدة غير مملحة
50 جرام سكر بودرة
8 جرام نشا ذرة
115 جرام زبادي طبيعي مخفوق
30 جرام بيضة
تحضير العجين أولاً.
ضع الزبدة الطرية والسكر البودرة و 30 جرامًا من البيض في وعاء الروبوت أو في وعاء.
امزج للحصول على نوع من الكريمة. ثم نضيف الدقيق.
تخلط مرة أخرى مع الورقة حتى تصبح العجينة متجانسة. لا تعجن أكثر من اللازم.
ضع الكرة التي ستسطحها في فيلم قابل للتمدد. كتاب رائع.
قم بإذابة الزبدة والجبن معًا في الميكروويف.
صب كل شيء في وعاء ثم أضف السكر الناعم ونشا الذرة.
يُمزج المزيج بالمضرب ، ويُسكب في الزبادي والبيض.
تخلط جيدا ثم تصب في حمام ماري.
اخفقي كل شيء باستمرار حتى تتكاثف الكريمة.
عندما يصبح الكريم كريميًا ، اسكبيه في وعاء نظيف ثم غطيه بفيلم مطاطي عند التلامس (مقاوم للحرارة). اتركيه ليبرد ثم ضعيه في الثلاجة.
عندما يبرد الكريم ، أخرجي العجين وافرده حتى يصل سمكه إلى 2-3 مم. قم بتقطيعها باستخدام قاطع بسكويت أكبر من القوالب المستخدمة (تلك الخاصة بـ pastéis de nata).
نضع قطعة من العجين على القالب واملأها بإتقان.
افعل الشيء نفسه بالنسبة للقوالب العشرة الأخرى (هنا فعلت نصف الاختبارات).
اخبزيها لمدة 18 إلى 20 دقيقة عند 170 درجة مئوية. يجب أن تكون العجينة أشقر ، وليست ذهبية للغاية لأنها ملدنة بعد ذلك. لتهدأ.
املأ التارتليت بالكريم. أستخدم حقيبة الأنابيب لهذا الغرض.
فرشاة مع صفار البيض. افعل هذا برفق.
ضعها في الفرن مرة أخرى ، هذه المرة على درجة حرارة 235 درجة مئوية لمدة 8 دقائق. إذا لم يتحول الصفار إلى اللون البني بدرجة كافية ، ضعي الشواية على الشواية لمدة دقيقتين ، لا أكثر ، واحرصي على عدم حرق التارتليت.
اتركيه للراحة لمدة 15 دقيقة قبل تذوقه !! إنها جيدة جدًا بشكل خاص ، ولا تزال ساخنة وسائلة من الداخل !!
