Acabo de regressar de uma curta estadia em Banguecoque e enquanto navegava numa loja de departamentos, deparei-me com estas tortas quentes de queijo creme a pingar. São pequenas bombas deliciosas e muito ricas. Podem ser comidos ainda quentes, e apesar da sua estreita semelhança com os pastéis de nata (a minha receita AQUI), o sabor não é nada parecido. Aparentemente vêm até nós do Japão e tornaram-se muito populares no Sudeste Asiático recentemente. Existem dois tipos, um mais firme que é comido frio e este que é comido quente e mais cremoso. Para ser testado!
Receita para 11 tartes :
70g de açúcar de confeiteiro
30g de ovo
100g de manteiga semi-salgada
215g de farinha T55
Para o creme:
185g de queijo cremoso Philadelphia
25g de manteiga mole
50g de açúcar de confeiteiro
8g de farinha de milho
115g de iogurte simples, mexido
30g de ovo
Primeiro que tudo, preparar a massa.
Coloque a manteiga mole, açúcar de confeiteiro e 30g de ovo na tigela do seu processador de alimentos ou numa tigela.
Misturar até obter uma consistência cremosa. Em seguida, adicionar a farinha.
Misturar novamente com a folha até que a massa esteja lisa. Não amassar mais do que o necessário.
Coloque a bola, que vai aplanar, em película aderente. Mantenha-se num local fresco.
Derreter a manteiga e o queijo creme juntos no microondas.
Verter a mistura para uma tigela e adicionar o açúcar de confeiteiro e a farinha de milho.
Bater juntos, deitar o iogurte mexido e o ovo.
Misturar bem e deitar num banho de água.
Bater continuamente até o creme engrossar.
Quando o creme estiver liso, verter para um recipiente limpo e cobrir com película aderente (resistente ao calor). Deixar arrefecer e depois colocar no frigorífico.
Quando o creme estiver frio, retire a massa e enrole-a para fora até 2-3mm de espessura. Corte com um cortador de biscoitos maior do que os moldes de pastéis de nata utilizados.
Colocar um pedaço de massa no molde e enchê-lo perfeitamente.
Fazer o mesmo para os outros 10 moldes (aqui fiz metade para os testes).
Cozer durante 18 a 20 minutos a 170°C. A massa deve ser de cor clara, não demasiado dourada, uma vez que é depois cozida de novo. Deixar arrefecer.
Cobrir as tortas com o creme. Utilizo um saco de canalização para isto.
Escovar com gema de ovo. Faça isto suavemente.
Regressar ao forno, desta vez a 235°C durante 8 minutos. Se a gema não estiver suficientemente dourada, ligar a grelha durante 2 minutos, não mais, tendo o cuidado de não queimar as tortas.
Deixe-os descansar durante 15 minutos antes de os comer! Eles são especialmente bons enquanto ainda estão quentes e a correr por dentro!
