Había probado una tarta equivalente en Ámsterdam el verano pasado y la tenía presente desde entonces. Me quedaba mucho queso Fourme d’Ambert en la nevera y un gran paquete de almendras en la alacena. Así que el momento tenía todos los elementos, sobre todo porque actualmente estoy en mi fase de boniato y mantequilla. Así que me puse a trabajar. El resultado es una tarta sorprendente en la que el boniato se equilibra perfectamente con el queso y la almendra aporta una consistencia inesperada.
Receta para una tarta de 22 cm:
Masa de pasta brisa:
250 g de harina
10g de azúcar
125 g de mantequilla fría semisalada
agua fría
1 batata
aceite de oliva
150 g de queso azul (Bleu d’Auvergne, Fourme d’Ambert, Saint Agur, etc.)
75g de almendras enteras
2 huevos
250 ml de nata líquida
sal, pimienta, nuez moscada
Poner la harina, el azúcar y la mantequilla fría cortada en trozos en un bol o en el bol de un robot de cocina.
Mezclar con la hoja o con la punta de los dedos hasta conseguir una consistencia arenosa.
Verter el agua fría suficiente para que la masa sea homogénea. No mezcle demasiado o la masa se endurecerá. Envolver en film transparente y enfriar.
Extender la masa ligeramente enharinada sobre papel de horno hasta alcanzar un grosor de 3 mm.
Forrar un círculo o un molde para tartas con ella y cortar el exceso.
Dejar reposar la masa en la nevera durante 45 minutos.
Pelar el boniato.
Córtalo en cubos grandes.
Rociar con dos o tres cucharadas de aceite de oliva y sal al gusto.
Hornear las piezas a 190°C durante unos 20 minutos.

Deje que los trozos se enfríen y luego colóquelos en la masa como desee. Añade las almendras.
Poner trozos de queso azul.
Mezclar la nata con los huevos con un tenedor, añadir sal y pimienta y un poco de nuez moscada, y luego rociar la tarta hasta 1 mm del borde.
Cocer en el horno a 180°C durante unos 40 minutos.
