Eu tinha provado uma tarte equivalente em Amesterdão no Verão passado e tinha-a mantido em mente desde então. Tinha muito queijo Fourme d’Ambert no meu frigorífico e um grande pacote de amêndoas no meu armário. Assim, o momento tinha todos os elementos, especialmente porque estou actualmente na minha fase de batata-doce e manteiga. Por isso, fui trabalhar! O resultado é uma torta incrível onde a batata doce é perfeitamente equilibrada com o queijo e a amêndoa traz uma consistência inesperada.
Receita para uma tarte de 22cm:
Massa de massa quebrada:
250g de farinha
10g de açúcar
125g de manteiga semi-salgada fria
água fria
1 batata doce
azeite de oliva
150g de queijo azul (Bleu d’Auvergne, Fourme d’Ambert, Saint Agur, etc.)
75g de amêndoas inteiras
2 ovos
250ml de creme completo
sal, pimenta, noz-moscada
Coloque a farinha, o açúcar e a manteiga fria cortados em pedaços numa tigela ou na tigela de um processador de alimentos.
Misturar com a folha ou com a ponta dos dedos até obter uma consistência arenosa.
Verter água fria suficiente para que a massa se torne homogénea. Não misturar em demasia ou a massa tornar-se-á dura. Envolver em película aderente e arrefecer.
Estender a massa levemente enfarinhada sobre papel vegetal a uma espessura de 3mm.
Alinha-se um círculo ou lata de tarte com ela e corta-se o excesso.
Deixar a massa a descansar num local fresco durante 45 minutos.
Descascar a batata-doce.
Corte-o em cubos grandes.
Polvilhar com duas ou três colheres de sopa de azeite e sal a gosto.
Cozer as peças a 190°C durante cerca de 20 minutos.
Aqui vamos nós!
Deixar as peças arrefecer e depois colocá-las na massa, como desejado. Acrescentar amêndoas.
Colocar em pedaços de queijo azul.
Misturar as natas com os ovos com um garfo, adicionar sal e pimenta e um pouco de noz-moscada, depois chuviscar a torta até 1 mm da borda.
