كنت قد ذاقت فطيرة مماثلة في أمستردام الصيف الماضي وظللت في ذهني منذ ذلك الحين. في ثلاجتي ، كان لدي الكثير من فورمي دامبرت وكان لدي علبة كبيرة من اللوز في خزانتي. لذلك جمعت هذه اللحظة كل العناصر ، خاصة وأنني الآن في طورتي البطاطا الحلوة والجوز. لذا أتمنى أن أعمل! والنتيجة هي فطيرة رائعة حيث تكون البطاطا الحلوة متوازنة تمامًا مع الجبن وحيث يجلب اللوز قوامًا غير متوقع.
وصفة فطيرة 22 سم:
معجنات:
250 جرام دقيق
10 جرام سكر
125 جرام زبدة نصف مملحة باردة
ماء بارد
1 بطاطا حلوة
زيت الزيتون
150 جرام من الجبن الأزرق (بلو دي أوفيرني ، فورمي دامبرت ، سانت أجور ، إلخ.)
75 جرام لوز كامل
2 بيض
250 مل كامل الدسم
الملح والفلفل وجوزة الطيب
نضع الدقيق والسكر والزبدة الباردة مقطعة إلى قطع في وعاء أو وعاء محضر الطعام.
امزج مع الورقة أو أطراف الأصابع حتى تصبح قوامها رمليًا.

دع العجينة ترتاح في الثلاجة لمدة 45 دقيقة.
قشر البطاطا الحلوة.
نقطعها إلى مكعبات كبيرة.
رشي ملعقتين أو ثلاث ملاعق كبيرة من زيت الزيتون والملح حسب الرغبة.
تُخبز القطع على حرارة 190 درجة مئوية لمدة عشرين دقيقة في الفرن.
وها أنت ذا !!
دع القطع تبرد ثم ضع بعضها في العجين كما يحلو لك. أضف اللوز.
ضعي قطع الجبن الأزرق.
نخلط الكريما مع البيض بالشوكة والملح والفلفل ونضع القليل من جوزة الطيب ثم نرش الفطيرة حتى تصل إلى 1 مم من الحافة.
ضعيها في الفرن واطهيها على حرارة 180 درجة مئوية لمدة أربعين دقيقة.
