Una nueva tarta de queso en mi blog, directamente inspirada en las que se encuentran en Brasil. ¡Con ricotta y guayaba! Una delicia muy sencilla de hacer en casa. La hago poco dulce y con el queso ricotta, se consigue una textura más ligera y menos grasienta que mi otra tarta de queso muy densa y cremosa (¡que me encanta así!). La guayaba añade la cantidad justa de sabor exótico y combina perfectamente con esta tarta de queso más ligera.
Receta para un chessecake de 20 cm:
165g de galletas (los hobnobs son perfectos, receta AQUÍ)
50g de mantequilla
10g de azúcar
500 g de queso ricotta
260 g de leche condensada azucarada
35g de harina
3 huevos
300 g de mermelada de guayaba
Triturar con una batidora las galletas seleccionadas hasta convertirlas en polvo. Añade el azúcar.
Verter la mantequilla derretida y mezclar bien.
Colocar una hoja de papel sulfurizado en un molde de 20 cm de diámetro con borde suelto. Basta con abrir el molde, colocar la lámina y luego cerrarlo para encajarla.
Vierta la masa en polvo en el molde.
A continuación, presionar bien con el dorso de una cuchara.
Hornear durante 10-15 minutos (a 160°C). Poner el horno a 170°C para el resto de la receta.
Batir las claras a punto de nieve.
En un recipiente aparte, mezclar la leche condensada, las yemas, el requesón y la harina.
Incorporar suavemente las claras de huevo, como para una mousse.
Colocar en el molde y hornear durante 40 minutos a 170°C (precalentado, con ventilador).
¡Está hecho! La tarta de queso se hincha y se agrieta un poco, pero volverá a su altura original después de 20 minutos.
Vierta la mermelada o jalea de guayaba en un cazo. Añadir un poco de agua si es necesario. Todo depende de la consistencia de la mermelada o jalea que tengas.
Derretir a fuego lento.
A continuación, vierta sobre la tarta de queso.
Con una cuchara, la mezcla llega hasta el borde de la tarta de queso.
Enfríe toda la noche antes de sacar la bisagra del molde con cuidado.
¡Eso es! Por fin puedes servirlo. Sin embargo, lo encuentro aún mejor después de 2 días en la nevera (¡envuelto en film transparente para protegerlo del olor de la nevera!).
