Um novo cheesecake no meu blog, directamente inspirado nos que se encontram no Brasil. Com ricotta e goiaba! Um tratamento muito simples de fazer em casa. Faço-o não muito doce e com o queijo ricotta, obtém-se uma textura mais leve, menos gordurosa do que o meu outro cheesecake muito denso e cremoso (que eu adoro assim!). A goiaba acrescenta a quantidade certa de sabor exótico e mistura-se perfeitamente com este cheesecake mais leve.
Receita para um bolo de xadrez de 20cm:
165g de bolachas (os hobnobs são perfeitos, receita AQUI)
50g de manteiga
10g de açúcar
500g de ricota de queijo
260g de leite condensado açucarado
35g de farinha
3 ovos
300g de compota de goiaba
Utilizar um liquidificador para moer os biscoitos seleccionados em pó. Acrescentar o açúcar.
Verter a manteiga derretida e misturar bem.
Colocar uma folha de papel vegetal numa lata de bolo de borda solta com 20cm de diâmetro. Basta abrir o molde, colocar a folha e depois fechá-la para a cunhar.
Verter a massa em pó para a frigideira.
Em seguida, pressionar bem com a parte de trás de uma colher.
Cozer durante 10-15 minutos (a 160°C). Colocar o forno a 170°C para o resto da receita.
Bater as claras de ovo até ficarem firmes.
Numa tigela separada, misturar o leite condensado adoçado, gemas, requeijão e farinha.
Dobrar gentilmente as claras de ovo, como para uma mousse.
Colocar na lata e cozer durante 40 minutos a 170°C (pré-aquecido, assistido por ventilador).
Está feito! O cheesecake incha-se e racha um pouco, mas cai de volta à sua altura original após 20 minutos.
Verter a compota de goiaba ou geleia para uma panela. Adicionar um pouco de água, se necessário. Tudo depende da consistência do doce ou geleia que se tem.
Derreter em lume brando.
Depois deitar sobre o cheesecake.
Colher a mistura até à borda do cheesecake.
Arrefecer durante a noite antes de remover suavemente a dobradiça do molde.
É isso mesmo! Pode finalmente servi-lo. No entanto, acho ainda melhor após 2 dias no frigorífico (embrulhado em película aderente para o proteger do cheiro do frigorífico!).
