Después de hacer los chocolates rosas «caseros», os prometí recetas que los contuvieran. Así que aquí está la inevitable tarta de praliné rosa, una especialidad de la región de Lyon. El resultado es realmente atractivo. Una tarta con un bonito color rojo, como el de una manzana de amor, con una textura crujiente gracias a la masa dulce y blanda, tierna y crujiente gracias a la crema cocida de pralinés y sus almendras trituradas. Este pastel es totalmente inmoral, pero al mismo tiempo, ¿por qué resistir la tentación de morderlo para descubrir sus inesperados sabores?
Receta de la tarta de praliné rosa (para un círculo de 18 cm)
Empieza por hacer la masa dulce.Sólo necesitarás la mitad de la masa, pero es más fácil hacerla entera. Puedes congelar la otra mitad. Poner todos los ingredientes, excepto el huevo, en un bol o en el bol de un robot de cocina.
Batir con la hoja del robot de cocina (esta es la K) hasta que se incorpore la mantequilla.
Todo parece arena. En este punto, añadir el huevo batido.
Vuelve a encenderlo sólo para incorporar el huevo batido, ¡pero no más!
Colocar la masa sobre papel de hornear.
Colocar otra lámina sobre la masa y extenderla con un rodillo hasta conseguir un grosor de unos 2-3 mm. Si es necesario, enharinar ligeramente la masa.
Si hace calor en casa, ponlo en un lugar fresco para poder manipular la masa. Colocar la masa extendida sobre el círculo, que a su vez está colocado sobre el papel de hornear. No olvides engrasar el interior de tu círculo.
Coloque la masa dentro del círculo, asegurándose de que tiene un buen ángulo recto.
Cortar la masa con un cuchillo.
¡Aquí vamos! ¡Un hermoso círculo con mucha masa (oscura)!
Colocar un poco de film transparente (especial para el microondas) sobre la masa y llenar la bolsa con harina. Cerrar el pequeño fardo para que llene toda la masa.
Un pequeño consejo. Me he dado cuenta de que muchas bandejas de horno se doblan en el horno. Esto crea un hueco entre la placa y el círculo. Si ya ha observado este fenómeno en casa, lo más fácil es poner el círculo con el papel de hornear en un molde con borde desmontable. La placa que sujeta el círculo no podrá doblarse y el conjunto quedará perfecto.
Hornear a 180°C durante unos 20 minutos. Sacar la bolsita de harina y pinchar la masa con un tenedor. Hornee de nuevo durante 15-20 minutos.
La masa debe estar bien dorada. Saca todo y decántalo con cuidado. Colocar la masa horneada en una rejilla para hornear.
Ponga el 40% de nata espesa y los bombones rosas triturados en un cazo grande.
Remover y poner a fuego moderado.
La crema se licuará rápidamente.
Llevar a ebullición y, sin dejar de remover, calentar la nata a 112°C. A esta temperatura, la crema tendrá la textura y la suavidad perfectas al enfriarse.
Verter la crema (roja en este momento) en la base de hojaldre horneada.
Deje que se enfríe completamente a temperatura ambiente y luego disfrute.
