Depois de ter feito os chocolates rosa “feitos em casa”, prometi-lhe receitas que os conteriam. Por isso, aqui está a inevitável tarte de pralina rosa, uma especialidade da região de Lyon. O resultado é verdadeiramente apelativo! Uma tarte com uma bela cor vermelha, como uma maçã do amor, com uma textura crocante graças à pastelaria doce e macia, tenra e estaladiça graças ao creme cozido de pralinas e às suas amêndoas esmagadas. Esta tarte é totalmente imoral, mas ao mesmo tempo, porquê resistir à tentação de a morder para descobrir os seus sabores inesperados?
Receita para a tarte de pralina rosa (para um círculo de 18cm)
Comece por fazer a massa doce.Só precisará de metade da massa, mas é mais fácil fazer a coisa toda. Pode congelar a outra metade! Colocar todos os ingredientes excepto o ovo numa tigela ou na tigela de um processador de alimentos.
Bater com a folha do processador de alimentos (este é o K) até que a manteiga seja incorporada.
A coisa toda parece areia. Nesta altura, acrescentar o ovo batido.
Ligue novamente só para incorporar o ovo batido, mas não mais!
Colocar a massa sobre papel vegetal.
Colocar outra folha em cima da massa e enrolar com um rolo de massa até uma espessura de cerca de 2-3mm. Se for necessário, farinha ligeira a massa.
Se estiver calor em casa, colocar num local fresco para que a massa possa ser manuseada. Colocar a massa enrolada sobre o círculo, que é ela própria colocada sobre o papel vegetal. Não se esqueça de untar o interior do seu círculo.
Coloque a massa dentro do círculo, certificando-se de que tem um bom ângulo recto.
Cortar a massa com uma faca.
Aqui vamos nós! Um belo círculo com muita massa (escura)!
Colocar alguma película aderente (especial para o microondas) sobre a massa e encher o saco com farinha. Fechar o pequeno molho de modo a que preencha a massa inteira.
Uma pequena dica! Tenho notado que muitas bandejas de cozedura se dobram no forno. Isto cria uma lacuna entre a placa e o círculo. Se já observou este fenómeno em casa, é mais fácil colocar o círculo com o papel vegetal num molde com uma borda removível. A placa que segura o círculo não será capaz de se dobrar e tudo continuará perfeito!
Cozer a 180°C durante cerca de 20 minutos. Retirar o pequeno saco de farinha e picar a massa com um garfo. Cozer novamente durante 15-20 minutos.
A pastelaria deve ser bem dourada. Retire tudo e decante-o cuidadosamente. Colocar a massa cozida numa assadeira.
Colocar os 40% de creme de leite e as pralinas rosa esmagadas numa grande caçarola.
Agitar e colocar em temperatura moderada.
O creme liquefaz-se rapidamente.
Levar à ebulição, depois, enquanto se mexe, aquecer o creme a 112°C. A esta temperatura, o creme terá a textura perfeita e a suavidade à medida que arrefece.
Verter o creme (vermelho nesta fase) para a base de pastelaria cozida.
Deixe arrefecer completamente até à temperatura ambiente e depois desfrute!
