El otro día fui al mercado a comprar melocotones. La semana anterior había probado unos muy buenos, pero esta vez me encontré con melocotones que resultaron blandos y sin jugo. Gran decepción, aunque había ido al mismo lugar y recogido la misma fruta que tenía el mismo aspecto. No quería tirarlos, así que en su lugar hice un delicioso pastel al revés. Yo precocino ligeramente los melocotones de antemano y así quedan muy sabrosos y jugosos. ¡La masa de arriba es adictiva! Y la mezcla entre ambos es la adecuada.
Para una tarta de 26x17cm:
7-8 melocotones blancos o amarillos grandes
200g de azúcar
165 g de mantequilla semisalada
225 g de harina
2 huevos grandes
1 cucharadita de vainilla líquida
Para esta receta, como he dicho, utilicé melocotones que eran perfectos para hornear. Pero incluso los melocotones muy buenos hacen una tarta muy buena. Sólo tengo 4 en la foto, pero acabé con unos 8. Todo lo que el molde permita.
Pelarlas y cortarlas en trozos grandes. Ponerlas en un cazo con dos cucharadas de azúcar.
Cocinar durante 5-7 minutos a fuego moderado.
Devolverán un poco de jugo, ¡lo cual es perfecto! Viértalos en el plato.
Hacer la masa mezclando el azúcar y la mantequilla.
Añadir la harina, los huevos y la vainilla.
Mezclar bien y verter sobre los melocotones.
Hornear durante 35 minutos a 170°C. ¡Adapte la cocción a su propio horno!
