Fui ao mercado no outro dia para comprar pêssegos. Tinha provado alguns muito bons uma semana antes, mas desta vez deparei-me com pêssegos que acabaram por se revelar sem papas e sem sumo. Grande desilusão, embora eu tivesse ido ao mesmo sítio e apanhado a mesma fruta que parecia a mesma. Não queria deitá-los fora, por isso fiz um delicioso bolo de cabeça para baixo. Eu pré-cozinho ligeiramente os pêssegos de antemão, e eles tornam-se muito saborosos e suculentos como resultado. A massa em cima é viciante! E a mistura entre os dois está correcta.
Para um bolo de 26x17cm:
7-8 pêssegos grandes brancos ou amarelos
200g de açúcar
165g de manteiga semi-salgada
225g de farinha
2 ovos grandes
1 colher de chá de baunilha líquida
Para esta receita, como disse, utilizei pêssegos perfeitos para assar. Mas mesmo os pêssegos muito bons vão fazer um bolo muito bom! Tenho apenas 4 na fotografia, mas acabei por ter cerca de 8. Tanto quanto o molde permitiria!
Descasca-os e corta-os em grandes pedaços. Colocá-los numa caçarola com duas colheres de sopa de açúcar.
Cozinhar durante 5-7 minutos em lume moderado.
Eles vão devolver um pouco de sumo, o que é perfeito! Verta-os para dentro do prato.
Fazer a massa, misturando o açúcar e a manteiga.
Acrescentar a farinha, os ovos e a baunilha.
Misturar bem e verter sobre os pêssegos.
Cozer durante 35 minutos a 170°C. Adapte a cozedura ao seu próprio forno!
