Hace mucho tiempo que no te ofrezco una tarta. Quería uno ligeramente anticuado, con pequeños cruces de masa por encima y un tentador y dulce olor a naranja y frutos secos mientras se horneaba. Lo hace con esta tarta de suaves albaricoques secos, ciruelas pasas, nueces y ralladura de naranja con una deliciosa pasta de polvo de avellana, ideal para entrar en calor en pleno invierno…
Receta de la tarta de frutos secos para un círculo de 18 cm x 2,5 cm (¡adapte la receta a otro tamaño!):
Masa:
210g de harina
125g de mantequilla
35g de azúcar glas
40g de polvo de avellana tostada
un huevo de 50 g
Llamada de broma:
75 g de mantequilla semisalada
115 g de mermelada de albaricoque
160 g de albaricoques secos blandos
120 g de ciruelas pasas deshuesadas
110g de nueces
ralladura de una naranja sin cera
Poner la mantequilla fría en trozos con la harina, el azúcar glas y la avellana en polvo en un bol o en el bol de la batidora. Aquí he utilizado polvo de avellana tostado. Puede utilizar el clásico polvo de avellana o incluso el polvo de almendra.
Mezclar hasta obtener una consistencia arenosa con la cuchilla de la batidora o con la punta de los dedos (para no calentar la mantequilla). A continuación, añada los 50 g de huevo.
Mezclar lo suficiente para obtener una pasta suave, pero no trabajar demasiado.
Formar una bola, aplanarla en film transparente y enfriar durante una hora.
Extender sobre papel de horno con la ayuda de un poco de harina, hasta un grosor de 3 mm.
Rellenar el círculo (o un molde clásico) colocado sobre el papel sulfurizado.
Asegúrate de rellenar el ángulo correcto entre el borde del círculo y el fondo. A continuación, corte el exceso de masa.
Derretir la mantequilla y la mermelada en un cazo o en el microondas.
Añadir los albaricoques secos blandos y las ciruelas pasas picadas.
Nueces trituradas.
Y la cáscara de naranja.
Respira hondo, porque el olor es muy tentador.
Rellenar la tarta y aplanarla.
Cortar tiras de la masa restante con una rueda dentada (incluso con un cuchillo…).
Colóquelos en la parte superior de la tarta en forma de cruces superpuestas.
Recorta el exceso y presiona las tiras firmemente en el borde del círculo.
Enfriar durante 40 minutos y luego hornear durante 45 minutos a 180°C.
Sacar con cuidado de la bandeja del horno y dejar enfriar antes de comer.
