Há muito tempo que não vos oferecia uma tarte. Queria uma ligeiramente antiquada, com pequenas travessias de massa estaladiça no topo e um cheiro doce tentador de laranja e fruta seca enquanto cozia. É feito com esta tarte de damascos macios secos, ameixas secas, nozes e casca de laranja com uma deliciosa massa de avelã em pó, ideal para aquecer no coração do Inverno…
Receita para a tarte de frutos secos para um círculo de 18cm x 2,5cm (adaptar a receita a outro tamanho!):
Colar:
210g de farinha
125g de manteiga
35g de açúcar de confeiteiro
40g de avelã assada em pó
um ovo de 50g
Brincadeira:
75g de manteiga semi-salgada
115g de compota de damasco
160g de damascos secos moles
120g de ameixas secas descaroçadas
110g de nozes
o sabor de uma laranja não tratada
Coloque a manteiga fria em pedaços com a farinha, açúcar em pó de gelo e avelã em pó numa tigela ou na tigela da sua batedeira. Usei aqui pó de avelã torrado. Pode usar o clássico pó de avelã ou mesmo pó de amêndoa.
Misture a uma consistência arenosa com a lâmina da sua batedeira ou com a ponta dos dedos (de modo a não aquecer a manteiga). Em seguida, adicionar os 50g de ovo.
Misture apenas o suficiente para fazer uma pasta macia, mas não trabalhe em excesso.
Forma uma bola, achata-a em película aderente e arrefece durante uma hora.
Espalhar sobre papel vegetal com a ajuda de um pouco de farinha, até uma espessura de 3mm.
Preencher o círculo (ou um molde clássico) colocado sobre o papel impermeável a gordura.
Certifique-se de preencher o ângulo correcto entre a borda do círculo e o fundo. Em seguida, cortar o excesso de massa.
Derreter a manteiga e a compota numa caçarola ou forno de microondas.
Adicionar os damascos secos macios e as ameixas secas picadas.
Nozes trituradas.
E a casca de laranja.
Respire fundo, porque o cheiro é muito aliciante!
Encha a tarte e aplaine-a.
Corte tiras da massa restante com uma roda serrilhada (mesmo com uma faca…).
Organizá-los na parte superior da torta em cruzamentos cruzados sobrepostos.
Aparar o excesso e pressionar firmemente as tiras até à borda do círculo.
Arrefecer durante 40 minutos e depois cozer durante 45 minutos a 180°C.
Retire cuidadosamente de um tabuleiro de ir ao forno e deixe arrefecer antes de comer!
