لقد مضى وقت طويل منذ أن قدمت لك فطيرة. كنت أرغب في صنع عجينة قديمة نوعًا ما ، مع طبقات صغيرة من العجين في الأعلى والتي تنبعث منها رائحة حلوة مغرية من البرتقال والفواكه المجففة أثناء الطهي. يتم تحضير هذا التورتة مع المشمش الناعم المجفف والخوخ والجوز وبرش البرتقال مع عجينة مسحوق البندق اللذيذة ، وهي مثالية للتدفئة في قلب الشتاء …
وصفة لفطيرة الفاكهة المجففة لدائرة بارتفاع 18 سم في 2.5 (قم بتكييف الوصفة إلى حجم آخر!):
عجين:
210 جرام طحين
125 جرام زبدة
35 جرام سكر بودرة
40 جرام من مسحوق البندق المحمص
50 جم بيضة
اتصال مزعج:
75 جرام زبدة نصف مملحة
115 جرام من مربى المشمش
160 جرام من المشمش المجفف الطري
120 جرام برقوق منزوع النواة
110 جرام جوز
نكهة البرتقال غير المشمع
ضعي الزبدة الباردة إلى قطع مع الدقيق والسكر البودرة ومسحوق البندق في وعاء أو في وعاء الخلاط. أضع مسحوق البندق المحمص هنا. يمكنك وضع مسحوق البندق الكلاسيكي أو حتى مسحوق اللوز.
امزج حتى يصبح لديك قوام الرمل مع ورقة الخلاط أو أطراف أصابعك (وليس لتسخين الزبدة). ثم نضيف 50 جم من البيض.
امزج ما يكفي للحصول على عجينة متجانسة ، ولكن دون الإصرار.
اصنع كرة ستسطحها في فيلم مطاطي واحتفظ بساعة واحدة في الثلاجة.
يوزع على ورق زبدة بمساعدة قليل من الطحين بسمك 3 مم.
املأ الدائرة (أو القالب الكلاسيكي) الموضوعة على ورق الزبدة.
املأ الزاوية اليمنى بين حافة الدائرة والقاع جيدًا بشكل خاص. ثم نقطع العجينة الزائدة.
تذوب الزبدة والمربى في قدر أو في الميكروويف.
يضاف المشمش الناعم المجفف والخوخ المقطّع إلى قطع.
مكسرات مطحونة.
ونكهة البرتقال.
خذ نفسًا عميقًا ، لأن الرائحة مغرية للغاية!
املأ الفطيرة وافرد كل شيء.
نقطع باقي العجينة إلى شرائح بواسطة أسطوانة مسننة (حتى بالسكين …).
رتبهم فوق الفطيرة في تقاطعات متداخلة متبادلة.
قم بقص الجزء الزائد واضغط على الشرائط لأسفل بإحكام عند حافة الدائرة.
يُبرّد لمدة 40 دقيقة ثم يُطهى لمدة 45 دقيقة على 180 درجة مئوية.
قم بفك الدائرة برفق على رف المعجنات ثم اتركها تبرد قبل التذوق!
