Como habrás visto en mi blog de cocina, soy una loca de los pasteles y nunca terminaré de explorar todas las combinaciones posibles. Sugiero esta receta fácil con coco y chocolate blanco. Esto se derretirá y dejará pequeñas cavidades caramelizadas que son absolutamente deliciosas, especialmente con la mantequilla semi-salada de este delicioso pastel, ¡que será perfecto para una merienda!
Receta para un pastel de 24 cm:
215 g de mantequilla semisalada derretida
215g de azúcar de caña
5 huevos de 50g (250g en total)
300 g de harina
7g de polvo de hornear
85g de coco seco, rallado
190 g de trozos de chocolate blanco
Derretir la mantequilla semi-salada y mezclarla con el azúcar de caña.
Agrega los huevos.
Mezclar y luego añadir la harina y la levadura en polvo.
Terminar añadiendo el coco y el chocolate blanco. Yo he utilizado pastillas de Valrhona cortadas en trozos, pero puedes utilizar pepitas, trozos o incluso una barra cortada en trozos grandes.
Un último golpe de espátula y el trabajo está hecho.
Verter en el molde forrado con papel de hornear.
Hornee a 155°C durante 1 hora y luego 30 minutos a 120°C con vapor si tiene esta opción. Como alternativa, coloque una fuente de horno con agua hirviendo en la parte inferior del horno durante los últimos 30 minutos. El pastel se hinchará muy bien.
Como es habitual en mis recetas de pasteles, deje que se enfríe a temperatura ambiente y, a continuación, póngalo a enfriar toda la noche con film transparente para protegerlo de los olores. Al día siguiente estará perfecto.
