Les presento el Suprême des Volcans, una pura delicia de almendra. Es un pastel sin harina que se deshace literalmente en la boca. Había descubierto este pastel bajo el nombre de «gâteau de Visan» o «Délice des Amandiers» y estaba completamente encantado, hasta el punto de buscar durante mucho tiempo la manera de acercarme a esta receta. Probé varias combinaciones y disparé varias veces antes de llegar a este resultado .
En primer lugar, me gustaría señalar que esta tarta sólo tiene sentido con las almendras enteras blanqueadas que uno mismo muele. Las almendras en polvo no darán el mismo resultado. El pastel es realmente sabroso y los pequeños trozos de almendra le dan una textura única.
Receta para 5 volcanes supremos:
-4 huevos -250g de almendras blanqueadas -180g de azúcar -90g de mantequilla -1/2 cucharadita de vainilla líquida
Precalentar el horno a 180°C. Comience por moler las almendras escaldadas en una batidora. Para esta receta es mejor utilizar almendras enteras que muelas tú mismo , porque así conseguirás una textura con algunos trocitos en el pastel.
Sólo hay que molerlos hasta obtener un polvo (ligeramente más fino) que el de la foto.
Separar las claras de las yemas.
Poner el azúcar y las almendras en polvo en un bol.
Poner las yemas (son 4, pero en la foto, sólo 2 ya que hice la mitad) la mantequilla derretida y la vainilla en la mezcla.
Mezclar bien.
Batir las claras a punto de nieve.
Añadir la primera cucharada de clara de huevo a la mezcla de almendras. Mezclar bien y luego añadir el resto de las claras de huevo, levantando la masa para no «romperlas».
Prepara 5 moldes de 10 cm de diámetro (o más grandes si quieres un pastel grande). Colocar un trozo de papel sulfurizado cortado a la medida del fondo del molde. Engrasar los lados de los moldes con mantequilla.
Verter la masa en los moldes.
Hornear a 180°C durante 15 minutos. Reduzca la temperatura del horno a 150°C y hornee durante otros 30 minutos. Vigile el proceso de cocción, ya que no todos los hornos se calientan de la misma manera. Los pasteles deben seguir cociéndose en el centro.
Retirar del horno. Sacar y enfriar sobre una rejilla.
