أقدم لكم Suprême des Volcans ، لوز نقي. هذه كعكة خالية من الدقيق تذوب في فمك حرفيًا. لقد اكتشفت هذه الكعكة تحت اسم “Gâteau de Visan” أو “Délice des Amandiers” وهي تماما مسحور ، لدرجة البحث لفترة طويلة عن طريقة للاقتراب من هذه الوصفة. لقد جربت عدة تجمعات ، وقمت بطهي العديد من الاختبارات قبل الوصول إلى هذا النتائج.
بادئ ذي بدء ، أود أن أشير إلى أن هذه الكعكة تأخذ كامل إمكاناتها فقط مع اللوز المقشر الكامل الذي تطحنه بنفسك. لن يعطي اللوز المطحون نفس النتيجة. الكعكة مليئة بالنضارة حقًا مع قطع صغيرة من اللوز مما يعطي ملمسًا فريدًا.
وصفة 5 بركان سوبريم:
-4 بيضات -250 جرام لوز مقشر -180 جرام سكر – 90 جرام زبدة -1/2 ملعقة صغيرة من الفانيليا السائلة
يُسخن الفرن على حرارة 180 درجة مئوية. ابدأ بطحن اللوز المقشر في الخلاط. من الأفضل لهذه الوصفة أن تستخدمي اللوز الكامل يطحن بنفسك ، لأنه بهذه الطريقة ، ستحصل على نسيج مع بعض القطع الصغيرة في الكعكة.
عليك فقط تقليصها إلى مسحوق (أدق قليلاً) مما في الصورة.
افصل البياض عن الصفار.
ضعي السكر ، مسحوق اللوز في وعاء.
ضع الصفار (هناك 4 صفار ، لكن في الصورة ، 2 فقط لأنني صنعت نصف الصفار!) الزبدة المذابة والفانيليا في الخليط.
خلط جيد.
اخفقي بياض البيض حتى يتجمد.
أضف ملعقة أولى من بياض البيض إلى مزيج اللوز. نخلط جيداً ثم نضيف باقي البياض مع رفع العجينة حتى لا تنكسر.
قم بإعداد 5 قوالب بقطر 10 سم (أو أكبر إذا كنت تريد كعكة كبيرة. ضع قطعة من ورق البرشمان مقطعة بحجم قاع الصينية. دهن جوانب القوالب بالزبدة.
صب الخليط في القوالب.
اخبزيها على حرارة 180 درجة مئوية لمدة 15 دقيقة. اخفض درجة حرارة الفرن إلى 150 درجة مئوية ثم اخبز مرة أخرى. 30 دقيقة. شاهد الطبخ لأن ليس كل الأفران تسخن بنفس الطريقة. لا يزال يتعين طهي الكعك في الوسط.
اخرج من الفرن. قم بفك القالب واتركه يبرد على رف سلكي.
