Una sopa siempre es bienvenida cuando llega la temporada de frío. Os ofrezco una versión de una combinación clásica y bastante atemporal: zanahorias, boniatos, leche de coco y jengibre. Listo en sólo 20 minutos, es perfecto para una cena reconfortante. ¡Consigue tus ollas y sartenes!
Receta para una sopa de 4 a 6 personas:
350g de zanahorias
350 g de boniato
1 cebolla
2-3cm de jengibre rallado
2 cucharadas de aceite de oliva
800 ml de agua
25 cl de leche de coco
sal
Para esta receta, no es necesario pesar los ingredientes. Pongo aquí valores que son apropiados, pero eres libre de modificarlos si es necesario. Básicamente, necesitas tantas zanahorias como boniatos.
Pelar las zanahorias y los boniatos (según su tamaño).
Córtalas en trozos y colócalas en una sartén.
Añadir el jengibre fresco rallado.
Pelar y picar la cebolla.
Vierta el agua, el aceite de oliva y la sal al gusto.
Cocer durante 15-20 minutos a punto de ebullición.
Licuar la sopa (yo uso una batidora de mano para esto) y luego verter la leche de coco.
Si la sopa está demasiado espesa para su gusto, añada un poco más de agua hasta alcanzar la consistencia deseada. Ajuste también la sal a su paladar.
