Uma sopa é sempre bem-vinda quando chega a estação mais fria. Ofereço-vos uma versão de uma combinação clássica e bastante intemporal: cenouras, batata doce, leite de coco e gengibre. Pronto em apenas 20 minutos, é perfeito para um jantar reconfortante. Tragam os vossos tachos e panelas!
Receita para uma sopa para 4 a 6 pessoas:
350g de cenouras
350g de batata-doce
1 cebola
2-3cm de gengibre ralado
2 colheres de sopa de azeite de oliva
800ml de água
25cl de leite de coco
sal
Para esta receita, não precisa de pesar os seus ingredientes. Coloco aqui valores que são apropriados, mas o senhor é livre de os modificar se necessário. Basicamente, são necessárias tantas cenouras como batatas doces.
Descascar as cenouras e batata(s) doce(s) (dependendo do seu tamanho).
Corte-os em pedaços e coloque-os numa frigideira.
Acrescentar o gengibre recém ralado.
Descascar e cortar a cebola.
Verter na água, azeite e sal a gosto.
Cozinhar durante 15-20 minutos no ponto de ebulição.
Misturar a sopa (uso uma varinha mágica para isto) e depois deitar o leite de coco.
Se a sopa for demasiado espessa para o seu gosto, adicione um pouco mais de água até atingir a consistência desejada. Ajuste também o sal ao seu paladar.
