Hacía tanto frío en París que hice mucha sopa. Aprovecho que tengo un blog de cocina para compartir la receta que hice el otro día. Siempre tengo dudas a la hora de poner una receta de sopa, porque creo que puedes poner lo que quieras y seguirá estando buena. Pero muchos de vosotros me pedís este tipo de recetas básicas. Por supuesto, no hay nada fijo ni definitivo en una sopa. Hay que hacerlo por instinto. Pero te estoy dando una buena base aquí para que los novatos trabajen y para que los más experimentados añadan su propio giro.
Receta de sopa de calabaza con jengibre:
-1 puerro -1 cebolla -2 patatas -2 zanahorias -1,5 kg de calabaza -2 litros de agua -2 pastillas de caldo de pollo -sal pimienta -Aceite de oliva -polvo de jengibre -polvo de cúrcuma -especies para colombo -20 cl de nata líquida
Lavar el puerro y cortar la base y la parte superior de las hojas. Cortar de forma gruesa.
Cortar la cebolla en trozos grandes.
Calentar dos o tres cucharadas de aceite en una olla. Añadir el puerro, la cebolla y las zanahorias peladas y cortadas en trozos.
Haz lo mismo con las patatas.
Este es mi gran trozo de calabaza.
Cortar en trozos y quitar la piel (la de la calabaza, no la de los dedos). Sí, primero corto en trozos grandes, quito la piel y luego corto en trozos más pequeños…
Añadir la calabaza a la olla.
Dejar cocer durante dos o tres minutos antes de añadir los dos litros de agua.
Salpimentar y añadir las pastillas de caldo de pollo.
Cocinar durante 30 minutos y luego comprobar que las patatas y la calabaza estén en su punto. Amplíe si es necesario. Yo suelo parar la cocción en este punto y dejarla 15 minutos antes de mezclar.
Mezclar con una batidora de mano.
Añade las especias: jengibre en polvo (o incluso jengibre fresco si lo tienes a mano) y cúrcuma. Incluso añadí un poco de especia de colombo.
Añadir la crema, mezclar bien y servir.
Es importante comprobar siempre el condimento y ajustarlo si es necesario.
