Acabo de regresar de Praga con algunas recetas en la maleta. Antes de mi viaje culinario, que publicaré muy pronto, aquí está esta deliciosa sopa de setas, patatas y eneldo. Está riquísimo, con nata y un poco de vinagre para excitar las papilas gustativas. Muchas gracias a Michal Suchanek de Chef Parade por compartir su receta con nosotros.
Sopa checa de setas, patatas y eneldo:
Caldo de verduras :
1 tallo de apio
1 zanahoria
1 chirivía
1 cabeza de ajos
1 chalota
sal, 10 granos de pimienta negra, 10 bayas de enebro
Para la sopa :
250g de setas rosas
2 patatas de carne firme
1 cebolla
2 cucharadas colmadas de harina
1 litro de caldo
1/4 de cucharadita de semillas de alcaravea, molidas gruesas
1 manojo pequeño de eneldo
100 ml de nata líquida
100 ml de crema agria (o crema doble y un poco de vinagre)
1 cucharada de vinagre de sidra
30 g de mantequilla semisalada
4 huevos
sal pimienta
Primero prepare el caldo de verduras. Para ello, prefiera las verduras orgánicas. Ponerlas con la sal, los granos de pimienta y las bayas de enebro en 1,2 litros de agua y llevar a ebullición. Dejar cocer durante 30-45 minutos.
Cortar los champiñones y las patatas en trozos.
Pelar y picar finamente la cebolla. Poner 3 cucharadas de aceite y la cebolla en una cacerola a fuego moderado.
Cocer durante 3-4 minutos y añadir las setas.
Mezclar bien y verter la harina.
Remover de nuevo para distribuirlo bien, y luego verter el caldo, colándolo (sobre todo para los granos de pimienta y las bayas).
Agrega las papas.
Ahora cocine durante 20 minutos hasta que las patatas estén tiernas.
A continuación, añada el comino.
Verter la crema agria y la nata líquida.
Mantequilla, eneldo y vinagre.
¡La sopa está lista!
Puedes añadir un huevo escalfado por persona (el método está AQUÍ)
Sirve un plato de sopa por persona y coloca suavemente un huevo escalfado encima. Corta la yema con un cuchillo y sírvela con pan.
