لقد عدت للتو من براغ مع بعض الوصفات في حقيبتي. قبل رحلة الطهي التي سأقوم بنشرها قريبًا ، إليك هذا الحساء اللذيذ من الفطر والبطاطس والشبت. هذا غني كما ينبغي ، مع الكريمة والقليل من الخل لإثارة براعم التذوق! شكراً جزيلاً لميشال سوشانك من Chef Parade لمشاركة وصفته معنا!
شوربة تشيكي بالفطر والبطاطس والشبت:
حساء الخضار :
1 ساق كرفس
1 جزرة
1 جزر أبيض
1 رأس ثوم
1 كراث
ملح ، 10 فلفل أسود ، 10 حبات من العرعر
للشوربة:
250 جرام فطر وردي
2 حبة بطاطس صلبة
1 بصلة
2 ملاعق كبيرة من الدقيق
1 لتر مرق
1/4 ملعقة صغيرة من بذور الكمون المطحونة في مسحوق خشن جدًا
حفنة صغيرة من الشبت
100 مل كامل الدسم
100 مل كريمة حامضة (إن لم تكن كريمة ثقيلة وقليل من الخل)
1 ملعقة كبيرة خل عصير التفاح
30 جرام زبدة نصف مملحة
4 بيضات
ملح فلفل
قم أولاً بإعداد مرق الخضار. لهذا ، تفضل الخضار العضوية. ضعيهم مع الملح والفلفل والتوت العرعر في 1.2 لتر من الماء واتركيهم حتى الغليان. اتركه يطهى لمدة 30-45 دقيقة.
نقطع الفطر والبطاطس إلى قطع.
قشر ودقة ختم البصل. ضعي 3 ملاعق كبيرة من الزيت والبصل في قدر على نار معتدلة.
يُطهى لمدة 3-4 دقائق ويضاف الفطر.
يخلط جيدا ويصب في الدقيق.
اخلطيها مرة أخرى لتوزيعها جيدًا ثم اسكبي المرق عن طريق ترشيحها (خاصة لحبوب الفلفل والتوت).
أضف البطاطس.
اطبخي الآن لمدة 20 دقيقة حتى تنضج البطاطس.
ثم تضاف الكراوية.
صب القشدة الحامضة والقشدة السائلة.
زبدة وشبت وخل.
قفز الحساء جاهز!
يمكنك اضافة بيضة مسلوقة لكل شخص (طريقة السكر هنا )
قدمي وعاءً من الحساء لكل شخص وضعي بيضة مسلوقة برفق. نقطع الصفار بشفرة سكين ونقدمها على الفور مع الخبز!
