Acabo de regressar de Praga com algumas receitas na minha mala. Antes da minha viagem culinária, que irei publicar muito em breve, aqui está esta deliciosa sopa de cogumelos, batata e aneto. Isto é rico como pode ser, com natas e um pouco de vinagre para excitar as papilas gustativas! Um grande obrigado a Michal Suchanek da Chef Parade por partilhar a sua receita connosco!
Cogumelos, batatas e sopa de endro checos:
Caldo de legumes :
1 talo de aipo
1 cenoura
1 pastinaca
1 cabeça de alho
1 chalota
sal, 10 calos de pimenta preta, 10 bagas de zimbro
Para a sopa :
250g de cogumelos rosa
2 batatas de carne firme
1 cebola
2 colheres de sopa amontoadas de farinha
1 litro de caldo de carne
1/4 colher de chá de sementes de alcaravia, grosseiramente moídas
1 pequeno ramo de endro
100ml de creme completo
100ml de natas azedas (ou creme duplo e um pouco de vinagre)
1 colher de sopa de vinagre de cidra
30g de manteiga semi-salgada
4 ovos
sal, pimenta
Preparar primeiro o caldo de vegetais. Para isso, preferem vegetais orgânicos. Colocá-los com o sal, calos de pimenta e bagas de zimbro em 1,2 litros de água e deixar ferver. Deixar cozinhar durante 30-45 minutos.
Cortar os cogumelos e as batatas em pedaços.
Descascar e cortar finamente a cebola. Colocar 3 colheres de sopa de óleo e a cebola numa caçarola em lume moderado.
Cozinhar durante 3-4 minutos e adicionar os cogumelos.
Misturar bem e deitar a farinha.
Mexer novamente para o distribuir bem, depois deitar no caldo, coando (especialmente para os calos de pimenta e bagas).
Acrescentar as batatas.
Agora cozer durante 20 minutos até as batatas estarem tenras.
Em seguida, adicionar o cominho.
Verter o creme azedo e o creme líquido.
Manteiga, endro e vinagre.
A sopa está pronta!
Pode adicionar um ovo escalfado por pessoa (o método é AQUI)
Servir uma tigela de sopa por pessoa e colocar gentilmente um ovo escalfado em cima. Corte a gema com uma faca e sirva com pão!
