¡Un nuevo risotto en mi blog de cocina! Y esta vez se trata de un risotto un poco menos tradicional, pero aún así absolutamente delicioso: setas en una suave crema de ajo para un risotto fundente con parmesano. Quería cocinar shiitake (de nuevo después de la tarta de shiitake) y shimeji porque tenía bastante en la nevera después de comprar en Tang’s. Y así empecé a hacer este risotto, que es realmente muy bueno. Puedes sustituir estas setas exóticas por otras mucho más clásicas y seguro que este risotto gustará igualmente. ¡Fácil y adictivo!
Para esta receta, he utilizado shiitake y shimeji. Es perfectamente posible utilizar setas más tradicionales en su lugar. No dudes en dejar tus comentarios sobre las setas que pongas.
Receta de Risotto de Shitake y Shimeji para 4 personas:
Setas en salsa de crema: -300g de shimeji -300g de setas shiitake -2 dientes de ajo -2 cucharadas de aceite de oliva o mantequilla -20 cl de nata líquida -1 cucharadita de caldo de pollo en polvo -sal pimienta -Cebollino picado
-300 g de arroz para risotto -2 chalotas -2 cucharadas de aceite de oliva -1 vaso de vino blanco -950ml de caldo de pollo -50 g de queso parmesano -sel
Comience por preparar las setas en crema. Aquí están los shiitakes a la izquierda y los shimejis a la derecha.
Basta con cortar el tallo del shiitake y cortar 1 cm de la raíz del shimeji para separarlos entre sí.
Poner la mantequilla o el aceite de oliva en una sartén caliente a fuego bastante alto y añadir todas las setas. Habrá mucho volumen, pero disminuirá rápidamente.
Salpimentar y añadir los dientes de ajo machacados. Remover de vez en cuando para que se cocinen bien las setas.
Añadir el cebollino .
Tras 5 minutos de cocción, añadir la nata líquida.
Hervir removiendo y añadir el caldo de pollo en polvo.
La mezcla se espesará. ¡Cuando lo es, está listo! Probar para ajustar la sazón. Reservar hasta que se utilice en el risotto.
Para el risotto (que debe prepararse realmente 25 minutos antes de servirlo), ponga el aceite de oliva y las chalotas picadas en una sartén caliente.
Cuando las chalotas estén cocidas, añade el arroz y fríelo en el aceite caliente para que quede ligeramente translúcido.
Añadir el vaso de vino blanco y dejar que lo absorba el arroz.
A continuación, añada el caldo de pollo en pequeñas cantidades, dejando que se absorba cada vez.
Cuando se haya añadido todo el líquido y se haya absorbido (se tarda unos veinte minutos a fuego lento, removiendo de vez en cuando), se añaden las setas y los 50 g de parmesano rallado (¡mejor fresco!).
Remover bien y dejar que se caliente perfectamente.
