Um novo risotto no meu blog de culinária! E desta vez é um risoto ligeiramente menos tradicional, mas ainda absolutamente delicioso: cogumelos num creme de alho liso para um risoto derretido com parmesão. Queria cozinhar shiitake (novamente depois da tarte shiitake) e shimeji porque tinha muito no frigorífico depois das compras no Tang’s. E assim comecei a fazer este risoto, o que é realmente muito bom. Pode substituir estes cogumelos exóticos por muito mais clássicos e tenho a certeza que este risoto vai agradar de qualquer forma! Fácil e viciante!
Para esta receita, usei shiitake e shimeji. É perfeitamente possível utilizar cogumelos mais tradicionais em vez disso. Sinta-se à vontade para deixar os seus comentários sobre os cogumelos que nele colocar.
Receita de Shitake e Shimeji Risotto para 4 pessoas:
Cogumelos em molho de natas: -300g de shimeji -300g de cogumelos shiitake -2 dentes de alho -2 colheres de sopa azeite ou manteiga -20cl creme completo -1 colher de chá de caldo de galinha em pó -sal, pimenta -Cebolinho picado
-300g de arroz risotto -2 chalotas -2 colheres de sopa de azeite de oliva -1 copo de vinho branco -950ml de caldo de galinha -50g de queijo parmesão -sel
Comece por preparar os cogumelos em natas. Aqui estão os shiitakes da esquerda e os shimejis da direita.
Basta cortar o talo do shiitake e cortar 1cm da raiz do shimeji para os separar uns dos outros.
Colocar a manteiga ou o azeite numa frigideira quente em lume bastante alto e adicionar todos os cogumelos. Haverá muito volume, mas diminuirá muito rapidamente.
Acrescentar sal e pimenta e os dentes de alho esmagados. Mexer de vez em quando para cozinhar bem os cogumelos.
Acrescentar o cebolinho .
Após 5 minutos de cozedura, adicionar o creme completo.
Levar ao lume enquanto se mexe e adicionar o caldo de galinha em pó.
A mistura irá engrossar. Quando estiver, está pronto! Sabor para ajustar o tempero. Deixar de lado até ser utilizado em risoto.
Para o risoto (a ser preparado realmente 25 minutos antes de servir), colocar o azeite e as chalotas picadas numa panela quente.
Quando as chalotas estiverem cozidas, adicionar o arroz e fritá-lo no óleo quente para o tornar ligeiramente translúcido.
Adicionar o copo de vinho branco e deixá-lo ser absorvido pelo arroz.
Em seguida, adicionar o caldo de galinha em pequenas quantidades, permitindo que seja absorvido de cada vez.
Quando todo o líquido tiver sido adicionado e absorvido (demora cerca de vinte minutos em lume brando, mexendo de vez em quando), adicionar os cogumelos e os 50g de parmesão ralado (fresco é ainda melhor!).
