Llevo años dando clases de cocina tailandesa, así que siempre tengo lo esencial en mi despensa. Esta receta está lista en 15 minutos, todo incluido. El resultado es muy sabroso y la albahaca tailandesa aporta su inconfundible sabor a este plato. Es muy difícil dejar de comerlo una vez que lo has probado. Perfecto para acompañar el arroz.
Para 4 personas :
6 muslos de pollo
2 cebollas rojas
1 buen manojo de albahaca tailandesa
60 g de cacahuetes tostados (salados o no, no hay mucha diferencia)
2 cucharadas colmadas de azúcar
2 cucharadas de salsa de chile y ajo (disponible en todas las tiendas de comestibles asiáticas)
1+1/2 cucharadas de salsa de ostras
2 cucharadas de agua
Pelar y cortar las cebollas rojas en trozos grandes.
Retirar la piel y el hueso de los muslos y cortarlos en trozos.
En un bol, mezclar el azúcar, la salsa de ostras, el agua y la salsa de chile y ajo. Yo uso la salsa de ajo y chile de la marca Lee Kum Kee, que encuentro en las tiendas de comestibles asiáticas. Probablemente haya otras marcas. Pero la ventaja es que no es demasiado fuerte.
¡Todo está listo! Aparte los cacahuetes. En la foto aún no lo he hecho, pero quita las hojas de los tallos de la albahaca tailandesa.
Vierta 6 cucharadas colmadas de aceite en un wok (o sartén grande) a fuego alto.
Dejar cocer durante 2-3 minutos hasta que la cebolla se haya dorado o se haya vuelto ligeramente translúcida.
A continuación, añada el pollo en trozos. Mezclar bien, todavía a fuego alto.
Cuando el pollo esté dorado por todos los lados, añada la salsa.
Mezclar bien y cocinar durante 3-4 minutos. Ten cuidado de no dejar que se queme. A continuación, añada las hojas de albahaca tailandesa y los cacahuetes.
Las hojas se derretirán muy rápidamente.
Mezclar bien y dejar que la salsa espese un poco. Servir de inmediato con arroz normal.
