Há anos que dou aulas de cozinha tailandesa, por isso tenho sempre o essencial no meu armário. Esta receita está pronta em 15 minutos, tudo incluído. O resultado é muito saboroso e o manjericão tailandês acrescenta o seu sabor inconfundível a este prato. É muito difícil deixar de o comer depois de o ter provado! Perfeito com arroz simples.
Para 4 pessoas:
6 coxas de frango
2 cebolas vermelhas
1 bom molho de manjericão tailandês
60g de amendoins assados (salgados ou não, não vai fazer muita diferença!)
2 colheres de sopa amontoadas de açúcar
2 colheres de sopa de molho de piripiri de alho (disponível em todas as mercearias asiáticas)
1+1/2 colheres de sopa de molho de ostras
2 colheres de sopa de água
Descascar e cortar as cebolas vermelhas em pedaços grandes.
Retirar a pele e osso das coxas e cortá-los em pedaços.
Numa tigela, misturar o açúcar, o molho de ostras, a água e o molho de piripiri de alho. Uso o molho de pimenta de alho da marca Lee Kum Kee que encontro nas mercearias asiáticas. Existem provavelmente outras marcas. Mas a vantagem é que não é demasiado forte!
Tudo está pronto! Ponha os amendoins de lado. Na foto ainda não fiz isto, mas remova as folhas dos caules do manjericão tailandês.
Deitar 6 colheres de sopa de óleo de amontoar num wok (ou frigideira grande) em lume forte.
Deixar cozinhar durante 2-3 minutos até a cebola ficar dourada ou tornar-se ligeiramente translúcida.
Depois adicionar o frango em pedaços. Misturar bem, ainda em altas temperaturas.
Quando a galinha estiver queimada de todos os lados, adicionar o molho.
Misturar bem e cozinhar durante 3-4 minutos. Tenha cuidado para não o deixar queimar! Em seguida, adicionar as folhas de manjericão tailandesas e os amendoins.
As folhas vão derreter muito rapidamente!
Misturar bem e deixar o molho engrossar um pouco. Servir imediatamente com arroz simples.
