Estos pequeños picatostes son deliciosos trozos de baguette en rodajas, recién horneados para que estén más crujientes y cubiertos con una fina capa de mantequilla de trufa negra y una fina rodaja de trufa. ¡Pero entonces te garantizo una explosión de sabor! Estas pequeñas bombas revelan todos los misterios de la trufa negra con gran detalle. Una forma sencilla de obtener el verdadero sabor de esta seta. ¡El sabor de estas minitostas abrirá una comida festiva llena de promesas culinarias! Para disfrutar lentamente con unas cuantas copas de champán.
Receta de picatostes con mantequilla de trufa negra:
-1 trufa negra de 40 gramos (¡o blanca!) -200g de mantequilla salada -varilla
Para esta receta, es necesario hacerla 3 días antes. La mantequilla «absorberá» el sabor de la trufa durante este tiempo.
Empieza sacando la mantequilla salada de la nevera.
Con una navaja para trufas, cortar 3/4 de la trufa en tiras finas.
La mantequilla debe estar a temperatura ambiente y maleable.
Poner la mantequilla en una cajita hermética . Cubrir con las láminas de trufa.
Tritura todo con un tenedor y especialmente ¡no con una batidora!
Como yo guardo parte de la trufa para cortarla y poner las últimas rodajas en unos picatostes, puedes guardar la mantequilla con la trufa en la caja. Sigue siendo mucha trufa extra que la mantequilla «atrapará».
Proteja la mantequilla con papel de plástico en el molde si quiere moldearla en ramequines pequeños…
También se puede dar forma de salchicha con un diámetro de 2 o 3 centímetros utilizando film transparente.
Deje la mantequilla en la nevera durante 3 días.
En el día, cortar rebanadas finas de una buena baguette.
Hornear a 180°C durante 5 minutos por cada lado, es decir, 10 minutos en total.
El pan debe estar seco y crujiente.
Cortar rodajas muy finas de mantequilla de trufa.
Colocar la rebanada suavemente sobre las rebanadas de pan.
Cortar el último cuarto de la trufa en tiras finas y colocarlas sobre la mantequilla.
Se acabó. Servir inmediatamente o dejar endurecer en un lugar fresco durante 10 minutos si la mantequilla se ha ablandado demasiado.
El consejo de Bernard: puede congelar la mantequilla bien envuelta para utilizarla posteriormente en otras recetas.
