Estes pequenos croutons são deliciosos pedacinhos de baguete fatiados, apenas cozidos até ficarem mais crocantes e cobertos com uma fina camada de manteiga de trufa preta e uma fina fatia de trufa. Mas depois garanto-vos uma explosão de sabor! Estas pequenas bombas revelam todos os mistérios da trufa negra em grande detalhe! Uma forma simples de obter o verdadeiro sabor deste cogumelo. O sabor destas mini-torradas abrirá uma refeição festiva cheia de promessa culinária! Para ser desfrutado lentamente com algumas taças de champanhe!
Receita para croutons com manteiga de trufas negras:
-1 trufa negra de 40 gramas (ou branca!!) -200g de manteiga salgada -wand
Para esta receita, é necessário que seja feita 3 dias antes! A manteiga irá “absorver” o sabor da trufa durante este tempo!
Comece por tirar a manteiga salgada do frigorífico.
Com uma lâmina de barbear de trufas, cortar 3/4 da trufa em tiras finas.
A manteiga deve estar à temperatura ambiente e maleável.
Colocar a manteiga numa pequena caixa hermética . Cobrir com as fatias da trufa.
Amassar tudo com um garfo e especialmente e não com um liquidificador!
Como guardo parte da trufa para a cortar e colocar as últimas fatias em alguns croutons, pode-se manter a manteiga com a trufa na caixa. Isso é ainda muita trufa extra que a manteiga “apanhará”.
Proteja a manteiga com um invólucro de plástico na lata se quiser moldá-la em pequenos ramequins…
Ou moldá-lo numa salsicha com um diâmetro de 2 ou 3 centímetros usando película aderente.
Deixar a manteiga no frigorífico durante 3 dias.
No dia, cortar fatias finas de uma boa baguete.
Cozer a 180°C durante 5 minutos de cada lado, portanto 10 minutos no total.
O pão deve estar seco e estaladiço.
Corte fatias muito finas de manteiga de trufas.
Colocar a fatia suavemente sobre as fatias de pão.
Cortar o último quarto da trufa em tiras finas e colocá-las sobre a manteiga.
Acabou. Servir imediatamente ou deixar para endurecer num local fresco durante 10 minutos se a manteiga tiver amolecido demasiado.
O conselho de Bernard: pode congelar a manteiga bem embrulhada para utilização posterior em outras receitas.
