Una receta muy sencilla de hacer y con un sabor realmente increíble. Lo mejor es servir este pesto en pan fresco. Está delicioso y el sabor de la berenjena asada queda bien realzado por el parmesano y los piñones. También se puede servir con pasta, como un pesto clásico. Visualmente se parece mucho al clásico caviar de berenjena, pero los sabores son tan diferentes que sorprenderá a sus invitados.
Receta para 4 personas:
2 berenjenas
80 g de queso parmesano
80g de piñones
1 diente de ajo pequeño
40g de aceite de oliva
sal pimienta
Colocar las dos berenjenas en papel de aluminio como para un papillote.
Colóquelos en una bandeja de horno y métalos en el horno precalentado a 180°C durante 45 minutos.
Déjelos enfriar en el papel antes de abrirlos.
Retira la piel y no pongas las berenjenas bajo el agua.
¡Les quitaría el gusto! Colocar la pulpa de la berenjena en un pequeño colador para que el jugo escurra lo más posible. En esta etapa tenía 300g de carne.
Dejar escurrir durante 15 minutos y luego poner la pulpa en una batidora con el resto de los ingredientes.
Añade pimienta al gusto y no añadas demasiada sal (¡el parmesano ya es bastante salado!).
Mezclar hasta conseguir una textura suave y sabrosa.
Puedes añadir piñones.
Servir tal cual sobre un buen pan o utilizar el pesto en la pasta.
