Uma receita muito simples para fazer com que o sabor seja realmente incrível. É melhor servir este pesto em pão fresco. É delicioso e o sabor da beringela assada é bem realçado pelo parmesão e pinhões. Também se pode servi-lo com massa, como um pesto clássico. Visualmente parece muito com um clássico caviar de beringela, mas os sabores são tão diferentes que irá surpreender os seus convidados!
Receita para 4 pessoas :
2 beringelas
80g de queijo parmesão
80g de pinhões
1 dente pequeno de alho
Azeite de 40g
sal, pimenta
Colocar as duas beringelas em folha de alumínio como para um papillote.
Colocá-los num tabuleiro e cozê-los num forno pré-aquecido a 180°C durante 45 minutos.
Deixe-os arrefecer no papel antes de abrir.
Retire a pele e não coloque as beringelas debaixo de água!
Iria tirar-lhes o gosto! Colocar a carne da beringela numa pequena peneira para permitir que o sumo escorra o mais possível. Nesta fase, eu tinha 300g de carne.
Deixar escorrer durante 15 minutos e depois colocar a carne numa misturadora com o resto dos ingredientes.
Adicionar pimenta a gosto e não adicionar demasiado sal (o parmesão já está bastante salgado!).
Misturar a uma textura e sabor suaves!
Pode adicionar pinhões.
Servir como se faz em pão bom ou usar o pesto em massa.
