¡Los «patacones» (pataconesse) son plátanos fritos de cierta manera (aplastados), de Colombia! Esta receta me la dio una muy buena amiga mía, Diana, a la que quiero agradecer que me enseñara en directo cómo hacerla y que me diera sus consejos familiares. Los patacones son deliciosos solos o como acompañamiento de platos colombianos. ¡Está deliciosamente crujiente!
Receta de patacones para 4 personas:
-4 plátanos verdes
2-3 dientes de ajo
-aceite, sal… ¡y ya está!
Las instrucciones
¡Estos son los plátanos verdes que debes conseguir! Para los que no conocen este plátano, ¡no se parece en nada al clásico plátano amarillo! La textura es un poco seca y pegajosa.
Cortar los extremos de cada plátano y cortar la superficie de la piel a lo largo.
Cortar rodajas de 2 cm de ancho.
Y poner los trozos en una cacerola llena de agua y unos cuantos dientes de ajo machacados (2 o 3).
En una sartén grande o en una freidora (¡o incluso en un wok!), calentar una buena cantidad de aceite. Cuando el aceite esté caliente, añadir los trozos de plátano (en dos o tres tandas, dependiendo de la cantidad a freír).
Dales la vuelta de vez en cuando. Los tendones, que tienen un color rosa pálido, se volverán amarillos. Dejar que se frían durante 1 minuto cuando tengan este color.
Dejar enfriar sobre papel absorbente.
Cuando los tallos de los plátanos sean manejables, coge una bolsa de plástico (no de las que hacen ruido, ¡más bien una bolsa de la fnac!) y pon un trozo de canto en la bolsa de plástico. Con la tabla de cortar, aplastar firmemente la carne.
¡El resultado es un patacón plano!
Proceda de la misma manera con todas las piezas.
Volver a poner el aceite al fuego y freír de nuevo los patacones durante 5 minutos, dándoles la vuelta a mitad de camino.
Escurrir en un plato forrado con papel de cocina después de salir del baño de aceite.
Añade sal como lo harías con las patatas fritas y disfrútalas cuando estén calientes.¡¡¡Gracias Diana!!!
