Patacones” (pataconesse) são bananas fritas de certa forma (achatadas), da Colômbia! Recebi esta receita de uma grande amiga minha, Diana, a quem gostaria de agradecer por me mostrar ao vivo como fazê-lo e por me dar dicas à sua família! Os patacones são deliciosos por si só ou como acompanhamento de pratos colombianos! É deliciosamente estaladiço!
Receita de patacones para 4 pessoas:
-4 plátanos verdes
2-3 dentes de alho
-óleo, sal…e mais nada!
As instruções
Estas são as bananas verdes que deves receber! Para quem é novo nesta banana, não é nada como a clássica banana amarela! A textura é um pouco seca e pegajosa.
Cortar as extremidades de cada banana e cortar a superfície da pele longitudinalmente.
Cortar fatias de 2 cm de largura.
E colocar os pedaços numa panela cheia de água e alguns dentes de alho esmagados (2 ou 3).
Numa frigideira grande ou numa fritadeira (ou mesmo numa wok!), aqueça uma boa quantidade de óleo. Quando o óleo estiver quente, adicionar os pedaços de banana (em dois ou três lotes, dependendo da quantidade a ser frita!).
Vire-os de vez em quando. Os tendões, que têm uma cor rosa pálido, vão ficar amarelos. Deixá-los fritar durante 1 minuto quando são desta cor.
Deixar arrefecer em papel absorvente.
Quando os caules das bananas forem manejáveis, pegue num saco de plástico (não os ruidosos, mais como um saco de fnac!) e coloque um pedaço na sua borda no saco de plástico. Com a tábua de corte, esmagar firmemente a carne.
O resultado é um patacón plano!
Proceder da mesma forma para todas as peças.
Devolver o óleo ao calor e fritar novamente as pataconas durante 5 minutos, virando a meio caminho.
Drenar sobre um prato forrado com toalhas de papel depois de sair do banho de óleo.
Acrescente sal como faria para as Batatas Fritas e desfrute quando estiver quente!Obrigado Diana!!!
