Con el tiempo un poco cambiante, me apetece de nuevo algo reconfortante y tranquilizador. Puedo escuchar la tormenta afuera mientras escribo la receta… Pero sobre todo tengo a mi lado un buen trozo de este delicioso pastel.
Como sabes, lo que más me gusta es experimentar en mi estudio. Sugiero este pastel que no lo parece, pero es deliciosamente húmedo y sabroso. Elaborado con plátano, coco y harina de trigo sarraceno, no contiene gluten. Me encanta el trigo sarraceno, y definitivamente no estoy eliminando el gluten de mi dieta, pero da una opción más a los que son intolerantes a él. ¡Me ha gustado este pastel! Incluso se puede hacer sin lactosa, ya que uso crema de coco y polvo de almendras y coco. El único momento en el que la utilizo es durante la caramelización de los plátanos y puedes sustituirla fácilmente por margarina. ¡Una obra imprescindible sean cuales sean tus creencias, porque es muy muy buena!
Receta para un pastel rectangular de 24x18cm o circular de 23cm:
4 plátanos
30 g de mantequilla, la mitad de sal y un poco de azúcar moreno (puede sustituir la mantequilla por margarina)
4 huevos (200 g en total sin cáscara)
200 g de crema de coco sin azúcar
170g de azúcar de caña
70g de polvo de coco rallado seco
95g de harina de trigo sarraceno
un poco de vainilla en polvo
85g de polvo de almendra
185 g de pulpa de plátano triturada
Pelar y cortar en rodajas los 4 plátanos. Colocarlas en una sartén grande con la mantequilla. Puedes usar margarina y un poco de sal para un pastel sin lactosa.
Espolvorear con un poco de azúcar de caña y cocinar a fuego moderado.
Los plátanos deben caramelizarse. También tendrás que pensar en darles la vuelta.
Viértalos en la fuente enmantecada o «margarinada».
Distribúyalos uniformemente.
Para la masa, romper los huevos en un bol y añadir el azúcar moreno.
Verter la crema de coco y el polvo de coco seco.
Harina de trigo sarraceno, vainilla y almendra en polvo.
Triturar dos plátanos con un tenedor.
Vierte 185 g de carne en la masa y cómete el resto.
Mezcla bien, ¡se acabó!
Verter sobre los plátanos.
Espolvorear con un poco de coco seco.
Introducir en el horno a 165°C durante 40-45 minutos, vigilando y adaptando a su horno.
Deja que se enfríe y luego disfrútalo como merienda sin esperar.
