Hace poco fui al pequeño restaurante vegano «Le Pagalou» en París y me encantaron muchos de sus platos, pero también sus postres, muy originales. Probé, entre otras cosas, este paté de anacardo tan sorprendente. Te ofrezco mi versión (¡porque no tengo todos sus secretos!). La combinación de eneldo y anacardos es totalmente inesperada, pero hace que sea algo muy adictivo. Pruébelo como aperitivo o para un entrante muy original.

Receta para 300 g de paté de anacardos
200 g de anacardos crudos
1 medio limón (20 ml de zumo)
unas ramitas de eneldo (15g para mí)
5g de sal
err… ¡en realidad es eso!
Poner en remojo los anacardos crudos en un gran volumen de agua el día anterior.
Al día siguiente (al menos 5 horas o toda la noche) escúrralos.
Normalmente se han vuelto muy blandos. Colóquelos en una licuadora.
Hacer un puré con una consistencia no demasiado fina.
Añade el zumo de limón y vuelve a mezclar un poco.
Coge unas cuantas ramitas de eneldo (no tienes que usar todo el manojo).
Picar el eneldo muy fino. Yo usé 15g, pero siéntase libre de usar más o menos.
Vierta el puré de anacardos y el eneldo en un bol.
Mezclar con cuidado.
Añadir sal al gusto (para contrarrestar el dulzor de los anacardos). Mezclar de nuevo y dejar reposar en el frigorífico durante al menos una hora antes de consumirlo sobre el pan. ¡Atención, muy muy buena!
