¡Me he dado cuenta de que todavía no he puesto una receta de shortbread clásico! Esta receta hace un shortbread perfectamente crujiente y fragante. Azúcar de caña, vainilla, mantequilla fresca, una receta sencilla pero imprescindible en cualquier libro de cocina. Como ya sabréis en , ¡soy una loca del shortbread! ¡Y estos tienen el sabor de la infancia que tanto me gusta! Esta es una buena manera de enseñar a los niños a cocinar. Es con lo que empecé a cocinar cuando era un niño.
Receta de pan de molde:
-500g de harina
-240g de azúcar de caña fina
-150g de mantequilla blanda
-110g de mantequilla semi-salada
-1/2 vaina de vainilla
-1 huevo + 1 yema mezclados, pesados y luego el peso dividido por dos (ver abajo)
Poner la harina en el bol de la batidora.
Este es el único azúcar de caña «fino» que pude encontrar. Porque el azúcar moreno tiene un tamaño de grano demasiado grande.
Añadir el azúcar a la harina.
Retirar la vainillina de la mitad de la vaina de vainilla y añadirla al bol. ¡Guarda la vaina para otra receta!
Mezclar el azúcar, la harina y la vainillina.
Cortar la mantequilla fría en trozos.
Añadir la mantequilla y remover para mezclar. Cuando la mantequilla está completamente mezclada, realmente parece arena.
Poner el huevo entero y la yema en un bol.
Mezclar bien con un tenedor y pesar la mezcla. Si el conjunto pesa 70g, coge sólo la mitad, es decir, 35g, para añadirlo a la mezcla de «arena».
Añadir la mitad de los huevos batidos a la mezcla de arena.
Mezclar sin «pinchar», es decir, sin insistir en la masa, que podría quedar demasiado dura después de la cocción. En cuanto todo sea homogéneo, dejar de mezclar.
Extienda la masa sobre papel de horno hasta alcanzar un grosor de 6 mm. A continuación, recorta las formas con un cortador de galletas. Aquí utilizo un molde de canelé.
Colocar el shortbread en una bandeja de horno forrada con papel de hornear. Deje el shortbread en la nevera durante una hora antes de hornearlo.
Calentar el horno a 180°C. A continuación, cocine durante 15-20 minutos.
